Eggplant round fried ( baigain gol)
Ingredients-
- Eggplant- 1
- Garlic- 4-5 cloves
- Salt to taste
- Turmeric Powder- 1/2 tsp
- Red Chilli powder- 1/2 tsp
- Cumin Powder- 1/2 tsp
- Rice - 1 handful
- Soak rice in water for 1 hour.
- Grind it after 1 hour.
- Cut Eggplant in rounds.
- Make a paste of garlic and ginger with grinded rice, salt, turmeric powder, cumin powder and red chilli powder.
- Soak eggplant rounds in this paste.
- Take a pan, sprinkle oil in a pan, on medium flame add these eggplant rounds, cook it for 10 minutes on each side.
- Serve it hot. Enjoy it with tortilla.
