So, this quarantine has taken toll on everyone, all over the world. Me and my family, we haven't gone out in last 1 month. We are doing our bit to help reduce this pandemic. What are you guys doing? Less availability of ingredients and regular groceries, has made me do some experiments with the available things at home. And while talking to my kiddo (you might have known from my earlier posts, she is very choosy in what she eats), she wanted to eat paneer Bhurji. As we all know, Bell peppers have high content of potassium and Vitamin C. I try to add 3-4 times in a week in our meal. And then steps in my mother instinct, knowing my daughter very well, I knew she is going to spend minimum 15-20 minutes to make sure she is not eating any bell pepper and pick all them up from her dinner plate. But, she doesn't know variety of ways I can feed her Bell peppers without her even knowing about it 😀. For this preparation, I actually spend only 15 minutes to make this dish. ...

Masala Arbi (Small Taro Root Stir Fry)

I like eating Arbi/Taro Root, but don't want to do the preparation, as if you start peeling Arbi bare hands, the itching will start, at all the places where ever it's juice touched you. So, to avoid that scenario, I boil Arbi, so that outer layer comes out without any effort. Few days back, when my mom was telling me about her lunch and Sukhi Arbi, I told her my problem of itching. She gave me a wonderful trick to avoid the itching, which you get after peeling Arbi. Apply few drops of Mustard Oil, all over your hand, and then peel Arbi, No itching will happen. It's that easy.  Being a working mom, I am always in a hurry. So, these curries comes as a rescue in dinner time.. I tried it, worked great. And made this awesome stir fry. Simple meal, in a simple way. Sometimes, this simple food, looks like a blessing. Makhmali Paneer

Paneer is all time favorite of my kiddo. I always keep some emergency Paneer in my fridge, when she doesn't want to eat anything, Paneer comes to my rescue.. Yesterday, was my fridge empty day, so didn't cook anything for dinner. All the leftovers was supposed to be finished... My husband told me, next day, that is, today he won't go to work, and will work from home... I was happy, that  don't have to cook anything in morning.. Then, before sleeping he told me, he has to go to office tomorrow for some urgent work, and he will leave by 7:30. Now, I was totally confused what to make for his tiffin. Normally, my next day menu is decided a day ahead, and I do my preparations night before. Since, no preparations was done, so only dish I could think of was of Paneer. I have invited few of my friends at dinner, over the weekend.. Made a whole buffet menu... Shahi Paneer, Dal fry, Gobhi fry, Boondi Raita, Jeera Rice, Puri's, chutney, salad and Ice-cream with sprinklers of top. Well, I do understand, when you are making lot of stuffs, the quantity of individual item has to be less. Other curries, were good but somehow, I made too much of Dal fry... My family do not want repeat the same dal next day, even if I reheat it properly... So, after some hit and trial experiments, I found out that, if I again process the dal in some other way, no one in family says no to it.. Today, was my laundry day, and I complete forgot to do cook lunch... And remembered, when it was time for my kiddo's friends to come... Yes, my kiddo plays everyday with he friends after lunch time... And this duration sometimes extends to 3-4 hours.. So, the lunch has to be filling and appropriate in all respects... Do you ever realized, we do eat so many veggies, which is full of nutrients.. Recently, I got to know, from my friend, "Kusum Bhabhi", that Bell Peppers are full of Vitamin C... And google told me, that by recent studies in Spain, Bell Peppers are high in Vitamin C and Vitamin E... I am very happy to know this fact, as I love Bell peppers... And, I include it very often in my meal... So, today I am presenting you my favorite dish, "Spicy Paneer- Shimla Mirch". The best thing, I liked about this dish, that it gets ready in 10 minutes... It works as a perfect side dish, when unsuspected guests arrive for a dinner/lunch... Palak  Paneer is one of the main dish at my household, which I make every 3rd or 4th day. The reason behind making Palak Paneer so frequently is, to feed my kiddo Palak as much as possible. he do not like Palak Parantha, Alu palak, or any other variations of Palak (spinach)... Which left me with not much choice... I do create variations in making Palak Paneer. But, only this yummy process is approved by her.... I am glad to say, now I really do not have to struggle to feed my family Spinach... Nutty Mutter Mushroom

I am not much fan of Mushrooms.... But,it does have lots of health benefits... Studies shows it helps prevent the chronic disease, due to the presence of antioxidants... I have tried lots of preparations of Mushroom.. Though it is loved by my family, the preparations somehow does not appeal me... And then I started avoiding getting Mushrooms from the store. Last weekend, I went to the nearest Chinese grocery store... I love this store, as it always has fresh vegetables, any time of the day or any time of the week you check there... So, when I saw this box of Mushroom over there, couldn't resist and brought it home... Now, was confused what to make from these mushrooms... My this post is dedicated to two wonderful ladies, Shikha Kapoor and Shimpa Rathore... Both of them have different events, going in their groups. Well, both the events, set me thinking... But, nothing specific came in mind.... One event has to had something in red, and another one, says it should have fruits and flowers as the main ingredient.. Guests are coming over for dinner...Do not have much time to cook... Well, thanks to my hubby for not informing me beforehand.... Have 3 hours in hand, and had to cook complete dinner.... I definitely love cooking, but then I like to decide my lunch/dinner menu, 1 day in advance... And if I am inviting guests over, I make a menu couple of days in advance, so I have enough time in hand, that I can do all the preparation, and my food is ready before time... And I can spend time with the guests, rather than spending it in kitchen.... I wanted to serve them the best food ever....
