Almond eggless Cookies (Eggless Badam Ke Biscuits)

Ingredients  -
Almonds- 1/2 cupAll purpose flour (Maida)- 1 cupBaking flour- 3/4 tspUnsalted Butter/Ghee - 1/2 cupSugar- 1/2 cupMilk - 2tsp 


Directions-
Mix All Purpose flour with a baking powder in a bowl.In another bowl, mix unsalted butter with sugar and milk, and blend it well.Take 5 almonds and divide in 2 halves.Break rest of the almonds in small pieces and mix it to the flour mixture.Add flour mixture to the sugar mixture,and make a dough out of it.Divide the dough in equal 10 parts and make small rounds of each part.Press the ball and decorate it with half cut almonds.Keep it on the oiled tray in already heated Oven at 350 degrees for 15 minutes.Take it out and let it cool down.

Vegetable Sandwich

Ingredients for 2 people-
Potato- 1 (Boiled)Onion - 1 small(Chopped)Green Chilli - 2 (chopped)Cabbage - 1 cup (chopped)Salt to tasteBlack Pepper powder - 1/2 tspChat Masala - 1 tspTomato Sauce - 2 tsp per sandwich Bread - 4 SliceOil-1 tsp Directions - 
Mash the potato, add chopped onion, green chilli, cabbage, salt, black pepper powder and chat masala, Mix them together.Put the 2slice of bread in a toaster and toast it till it turns light brown in color.Apply a layer of tomato sauce in 1 slice of bread.Apply 1/2 inch thick layer of potato mixture and spread it all over the slice of bread.Cover the bread from another slice of bread.On a heated pan, add 1tsp of oil and cook the sandwich on both sides for 30 seconds.Serve it hot with tomato sauce or Cilantro chutney.

Vegetable Cutlet

Ingredients-
Potato- 2 (Boiled)Onion (Small)  - 1 (Chopped)Green Chilli - 3Cabbage - 1 cup (Chopped)Green Peas - 1 (Boiled)Bread Crumbs - 1 CupSalt to tasteBlack Pepper powder - 1 tsp


Directions-  
Mash Potato in a vessel.Mix all ingredients except bread crumbs, together.Divide the Potato Mixture in 6 equal parts.










Make a small ball of each part.Take oil in a palm and Roll it over the bread crumbs.Make the shape of cutlet.Add a spoon of oil in a pan, add cutlet in it and fry from all sides, till it turns golden brown in color.                                                     OR

          Brush the cutlet by oil and keep it inside the Oven for 10 minutes or till it turns golden brown in color.
Garnish it with a chopped Cabbage, sliced onion and carrot.Enjoy it hot with tomato Sauce.

Vegetable Pulao

Ingredients-
Basmati Rice - 1cupGreen Peas (Frozen/ fresh) - 1 cupCarrot- 1 big (chopped)Potato - 1 medium size (chopped)Cauliflower - 2-3 flowers (chopped)Onion - 1/2 big (chopped)Cumin seeds (jeera)- 1tspCinnamon sticks (Dal Chini) - 2Cloves(laung) - 2Black Cardamoms (badi elaichi) - 2Bay leaves (Tej Patta)- 2Ghee/ Olive Oil - 1tspWater - 2cupsSalt to tasteBlack Pepper Powder - 1/4 tspRaisins - 1/2 small cup Almonds - 12-15 (cut in small pieces)Directions- 
Wash and soak rice for 20 minutes. After 20 minutes, drain excess water and keep aside.In a Pan, add 2 tbsp of ghee or Olive Oil.Add Cumin seeds, Cinnamon, Cloves, Black Cardamoms, Bay leaves, Salt and chopped onion and stir it for 2 minutes on high flame.Add all other vegetables with soaked rice and 2 cups of water, cover it and on medium floame let it get cooked for another 9-10 minutes.Add raisins and almonds and stir the pulao. Allow it to stand for 5 minutes, and then serve hot with dal (lentil) or curry.

Masala Mushroom

Mushrooms - 7-8 Big (Sliced)Onion - 1/2 ( finely chopped0Ginger piece - 1" (cut in strips)Garlic cloves - 3-4 (finely chopped)Tomato - 1 big (chopped0Oil - 1tspSalt to tasteTurmeric Powder - 1/4 tspRed Chilli Powder - 1/4 tspGaram Masala Powder- 1/4 tspChat masala - 1/2 tspBlack Pepper Powder - 1/4 tspCilantro - 1/2 cup (to garnish)

Directions - 
Add sliced Mushroom in an empty pan for 5 minutes or till all the water of mushroom gets dried up.Take it out in an another vessel.Heat Oil in a same Pan for a minute.Add chopped Onion, Garlic and Ginger, and saute it on high flame for 2 minutes.Add tomato and spices, saute and let it get cooked for 2-3 minutes, covered. Add Mushroom and stir it for 3-4 minutes, covered. Add 1 cup of water, saute and let it get cooked for another 10 minutes, covered on medium flame.Garnish it with chopped Cilantro and ginger strips.Serve it hot with chapati/ Parantha or nan.

Mint leaves Chutney

Mint leaves- 1 bundleTamarind pulp (soaked and seeds removed)- 1/2 cupSalt to tasteRed Chilli- 2Garlic cloves - 2-3 Directions -
Mix Mint leaves with tamarind pulp, garlic cloves, salt and red chilli.Grind them together.

Vanilla-Almond Cake

All purpose flour - 2 cupsSugar - 3/4 cupMilk powder - 1 cupCream - 1 cupCooking oil - 1 cupBaking powder - 1 tspVanilla drops - 2 tspAlmonds - 1cup (raw-break in small pieces) Directions -
In a big bowl, mix all purpose flour, milk powder and baking powder.In another Bowl, mix sugar, cream, Vanilla drops and cooking oil together, mix to make all the sugar crystals dissolved.Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously.Add a cup of milk as required to make the batter thin, thin enough to make the spoon move easily in the batter.Mix almond pieces in a batter. In an oven cooking pan, Spray some oil with little of flour all over the pan.Transfer the batter in a pan.Cook inside the oven for 30-35 minutes at 350 degree F temperature.Take it out, insert a toothpick in the center of cake, it comes out clear, your cake is done, If no put it again for 5 minutes, and repeat the process.Put the cake outside of oven and let it cool down.Garnish it …

Egg - Burger

Burger Buns - 2 bunsLettuce - 1 leaf (chopped)Red Onion - 1/2 small cup (sliced)Left over stew- 4 tsp (mashed)Tomato Sauce - 2 tsp Oil - 2 tspSalt to tasteBlack Pepper Powder - 1 tspEgg - 2 nos. Directions-
In an Open pan, add a tsp of oil, heat it, spread it all over the pan and break egg in the oil evenly spreading it making it a size of a bun.Sprinkle salt and black pepper powder before egg gets cooked. Turn it over and cook it on other side.Toast your Burger buns in a toaster.Put a layer of 2 tsp of mashed stew.Add chopped lettuce, sliced onion above that and at the top add Egg Pouch.Keep the other half from the top.Enjoy it hot.

Burger w/left overs

Ingredients-

Toast your Burger buns in a toaster.Put a layer of 2 tsp of mashed stew.Add chopped lettuce, sliced onion above that and at the top add sliced tomato.On the other half of bun, add a layer of tomato sauce.Enjoy it hot.

Mixed Vegetable Burger

Gajar ka Halwa (Carrot Fudge)

Ingredients for serving 10 people-
Carrot - 5-6 (grated)Milk - 2 Big cupsKhowa - 1 Small cupSugar - 5-6 tspCardamom Powder - 1 tspRaisins - 1/2 small cupAlmonds- 1/2small cup (chopped)Ghee - 2 tbsp


Directions -
Heat the pan and add grated carrot, in 2-3 minutes you will notice that it has started leaving water. Reduce the flame to medium and add milk and stir thoroughly.Cover and cook for 15-20 minutes.Add Khowa and keep on stirring for some time.When all the liquid content of Halwa gets dried up, add ghee and stir on high flame for 5-7 minutes.Now, add sugar, cardamom powder, raisins and almonds. Keep on stirring for another 10 minutes on high flame.Serve it hot.

Rassewala Aalu ( Potato curry)

Ingredients-
Boiled Potatoes - 4 medium (1/2 inch pieces)Yogurt - 1 cupGram flour (besan)- 1tbspSalt to tasteTurmeric Powder - 1/4 tspPure Ghee - 2 tbspCumin seeds - 1/2 tspAsafoetida - 1 pinchCurry leaves - 7-8Ginger - 1/2 inch pieces (chopped)Green Chillies - 2 (chopped)Red Chilli Powder - 1/4 tspGaram Masala powder - 1/2 tspDirections -
Whisk yogurt with gram flour, salt and turmeric powder.Add 3/4th cup of water and mix well. Heat ghee in a pan. Add cumin seeds and when they begin to change colour add asafoetida, curry leaves, ginger and green chillies. Sauté for a minute. Add red chilli powder and the yogurt mixture and mix well. Add potatoes and cook, stirring continuously.  Once the mixture comes to a boil, reduce the heat and simmer for another five to six minutes till potatoes are soft. Garnish with garam masala powder and serve hot with Roti or Parantha.

Fried Tortilla for Chat

All Purpose flour - 2 big cupOil - 1 bowl + 1/2 bowlSemolina ( suzi)- 1/2 bowlSalt to tasteMangrela- Ajwain - 1tsp


Directions -  In a bowl, mix all purpose flour with salt, semolina and mangrela-ajwain and mix it thoroughly.Add 1/2 bowl of oil and mix it properly.Now, add water as required and make a tight dough.Divide the whole dough in 10 equal parts.Make balls out of every part.Roll it on cooking floor by a rolling pin.Take a smallest steel bowl and make the impression of circles by pressing bowl hard enough.Separate these circles from the left over parts.Add oil in a heated pan and fry these circles.Add these fried tortilla in any Chat or you can also eat it plain.

Samosa Chat

Ingredients for 2 people-

Samosa- 2Hara Mutter ke choley- 2 bowlSalt to tasteBlack Pepper Powder - to sprinkleYogurt - 2 tspTamarind Chutney - 2 tspChat Powder- 1 tspFried tortilla - 1 BowlDirections -  In a bowl, beat yogurt and add Salt and black pepper powder.Now, Break Samosa in 2 parts and keep it in a serving dish.Add hot Hara Mutter ke choley on top of it.Add 2tbsp of beated Yogurt.Add 1 tsp of Tamarind Chutney all over the plate.Sprinkle some salt and Black pepper powder and chat powder as desired according to taste.Crush Fried tortilla from hand and spread all over the chat.Enjoy it hot with a cup of Tea/ Coffee.

All Purpose flour - 2 big cupsSalt to tasteRed Chilli Powder - 1tspPotato- 2 (big)Garlic- 2 cloves (minced)Onion - 1/2 (big-chopped)Cilantro - 1 cup (chopped)Peas - 1 small cupPeanuts- 1 handfulPaneer - 1 small cup (diced)Oil - 1 bowl + 2 tbsp+ 1/2 small cupMangrela- ajwain- 1 tspSemolina (Suzi)- 1/4 big cupDirections - 

Divide the potato in 4 equal parts. Wash it and put it at high temperature in microwave for 12 minutes.At the same time, mix All Purpose flour with salt, Mangrela- Ajwain and 1/2 small cup of oil. Mix it thoroughly.Add semolina and mix it. Add water as required and make a tight dough.Cover it with a cloth wet (with a hot water) and leave it aside for 30 minutes.

French Fries/Potato Fries

Potato - 1Oil- 1 bowl ( to fry)Salt as requiredBlack Pepper Powder to sprinkle
Directions -  Peel the Potato.Cut it in string form.Soak it in cold water with salt for 30 minutes, if possible add few cubes of ice in the bowl.Now in a heated pan, add oil and let it get heated.Drain the water and keep it on paper towel for 5 minutes to drain the excess .
Now, fry the potato in an oil till it turns light brown in color.Take it out and let it cool down for 5 minutes.Again, fry the fried potato and fry till it color changes slightly dark than before.Serve it hot with burger and tomato sauce.

Vegetable Cheese Pizza

Ingredients for 1 large pizza-
All Purpose flour - 3 cupsActive dry yeast - 2 tsp ( 1 Packet)Sugar - 1 tbspPaste Sauce - 4 tbspOil (to spray)Cheese - 1 handful (grated)Onion - 1/2 small cup (sliced)Bell Pepper - 1/2 small cup (cut in small pieces)Mushroom - 1/2 small cup (cut in small pieces)Salt- 1tspDirections -  In a 1 cup of warm water, add Yeast and mix it and let it get set for 5 minutes. You will get to know the yeast is ready, as bubble formation will start on the top surface of liquid.In an another bowl, mix All Purpose flour with Sugar, salt and yeast liquid. Make a dough out of it and add water as required. You want your dough to be soft and sticky, so add water in a little amount as required.
Now, Knead the dough by stretching the dough and not letting it break and then again mixing it back to the dough. Knead it for 10 minutes. The color of dough will change and will become lighter.

Raw Banana-Potato Stew

Ingredients-

Raw Banana- 1 (peeled)Potato - 1 (Medium size)Garlic cloves- 2Onion- 1/2 (sliced)Salt to tasteTomato - 1 (chopped)Turmeric Powder - 1/2 tspCoriander Powder - 1tspRed Chilli Powder - 1 tspCumin Powder - 1tspOlive Oil - 1tspDirections-  In a pan, add Olive oil and before heating add chopped garlic and sliced onion.Turn on the cooking stove and add diced potato, and fry on high flame for 2-3 minutes.Add diced raw banana and chopped tomato and mix it for 30 seconds.Add salt according to taste, with all spices.Add 1/2 glass of water.Cook it covered for 10 minutes.Garnish it with chopped Cilantro.Enjoy iy hot with Roti/ Tortilla or Parantha.

Badam Ka Halwa (Almond Confectionary)

Almonds- 12-15 Pieces(raw)Sugar- 2 tspGram Flour (besan)- 1 tbspGhee/Unsalted Butter - 2 tbspMilk- 1/2 cup 


Directions- 
Grind dry almonds in a mixer jar.In a dry pan, heat ghee. When heated, add crushed Almonds and fry for 5 minutes, to make it crunchy.Now, add Gram flour and mix it thoroughly.

Keep frying, till Gram flour turns golden brown in color.Add Sugar, mix and then add 1/2 glass of water and 1/2 glass of milk.Boil and keep stirring.In sometime, after about 5-7 minutes, water liquid will evaporate and the content will start sticking in the base of pan.Keep stirring, till all the water is evaporated.Your Halwa is ready. Serve it hot.Note- Very good medicine for cough and cold, can be easily used for babies and kids. For Babies, do not use more than 4-5 tsp in 1 time, twice a day and for Toddlers, 10-12 tsp, twice a day, Adults can have 1 bowl in 1 time, twice a day.

Cilantro-Cumin flavored Rice

Ingredients for 4 people-
Rice - 2 cupSalt to tasteBlack Pepper Powder- 1/2 tsp Cumin seeds- 1 tspCumin powder - 1tsp Cilantro- 1 cup (chopped)Corn - 1 cupPeas- 1cup (to garnish)Butter/ Ghee- 1tsp
Directions - 
Wash Rice and soak it in water for 10 minutes.Boil Rice in a bowl, with double amount of water in a microwave for 20 minutes.In a Pan, add butter/ghee, let it heat up. Add Peas and salt and fry it for 5 minutes.Take it out.Now, Add cumin seeds to the ghee, and when it turnd dark grey in color, add chopped cilantro and fry it for 2-3 minutes.Add Corn, Salt, cumin powder and black pepper powder, stir it.Add Rice and mix thoroughly for 5 minutes.Transfer the Rice to the serving bowl.Garnish the rice by adding fried Peas on the top in center.Enjoy it with any curry.

French Egg Omelette

French Egg Omelette-  As I mentioned in my earlier posts, I have a special love for eggs. I love eggs in any form, and love to make different versions of it. And yes, I will say, every spice and condiment changes the flavor of eggs. Then, again I really love few versions of eggs, and can eat every other day. One of them is French Egg Omelette. I find it so delicious, with the right amount of protein, and right intake of veggies in 1 meal. And yes, it is loved by kids as well. Well, my observation about this meal is, it is high in protein, nutritious, less fat, filling and so delicious that you want to make it every other day. This dish is a complete meal. But, you can also enjoy it with a slice of bread, or tortilla.

Dahi Aloo Curry(Yogurt-Potato Stew)

Ingredients for 2 people-
Yogurt - 1 cup (beated)Potato (aloo)- 1 ( big, boiled and diced)Garlic - 2-3 cloves (minced)Onion-  1/2 (chopped)Salt to tasteTurmeric Powder - 1/2 tspRed Chilli Powder - 1/2 tspCumin Powder-  1/2 tspCooking Oil - 1tsp Directions -
In a heated Pan, add oil, heat it and add minced garlic, fry it for 30 seconds and add chopped onion and fry it, till it turns light brown in color.Add boiled Potato, on high flame, keep frying for 2-3 minutes.Add salt, turmeric powder, red chilli powder and cumin powder, and on medium flame, stir the whole mixture and cover the lid.Let it get cooked for another 10 minutes, on medium flame.Increase the flame and add yogurt/Dahi to the stew.Mix it on high flame, with in 5 minutes, all the liquid of Yogurt will evaporate and only solids are left over.Close the flame and let the stew settle down for 5 minutes.Transfer the stew in a serving bowl.Garnish it with finely chopped Cilantro.

Bread- Poha

Bread - 8 pieces (Edges removed)Salt to tasteBlack Pepper Powder - 1tspOil - 2 tsp

Directions - 
Cut the bread pieces in 9 equal parts.In a heated Pan, add oil and then bread pieces.Stir so that every piece of bread is touched by oil.Let it get fried on high flame for 10 minutes. Keep stirring continuously, so it doesn't get burned.Sprinkle salt and Black pepper powder.

Bread Pizza

Bread Slice - 2 SliceOnion- 1/8 (Sliced)Bell Pepper - 1/4 (sliced)Carrot-  1/4 (sliced)Roasted Semolina (Suzi) - 1/2 cupWhole Milk - 1 cupSalt to tasteBlack Pepper Powder - 1/2 tspOil- 2tsp


Directions -
In a bowl, add semolina with salt, black pepper powder and whole milk. Leave it aside for 10 minutes.Toast Bread in a toaster.On one side of bread, add a layer of semolina mixture.Above that, add a slice of carrot, 2 slice of onion and 1slice of bell pepper, randomly.On an heated pan, add 1tsp of oil and on medium flame, let this side of mixture get  cooked for another 5-7 minutes.Serve it hot with tomato sauce.

Besan ki Gatte Wali Sabzi (Gram flour Curry)

Gram Flour- 3 tbspOnion Paste- 3 tbspGarlic - 2-3clovesOnion - 1/2 (chopped)Green chilli- 2 (chopped)Tomato - 1(chopped)Cumin seeds - 1 tspSalt to tasteTurmeric Powder- 1/2 +1/2 tspRed Chilli Powder - 1+1 tspCoriander Powder - 1tspCumin Powder - 1tspCooking Oil - 2 tsp + 1/2cupWater as Reqd.Directions - 





In a bowl, mix Gram Flour with salt, 1/2 tsp of turmeric Powder and Cumin Powder.Mix it with 2tbsp of Onion Paste with 2 tsp of mustard oil, add onion paste slowly as required and make a hard dough.




Divide the dough in two equal parts. Form a cylindrical shape of two doughs.In an Open pan, boil the cylindrical doughs for 15 minutes. 


Cut the dough in equal rounds. In an open heated pan, add 1/2 cup of oil and heat it.






Fry the dough circles. Grind garlic, chopped onion, green chilli and tomato together.
