Spicy Paneer-Shimla Mirch

Do you ever realized, we do eat so many veggies, which is full of nutrients.. Recently, I got to know, from my friend, "Kusum Bhabhi", that Bell Peppers are full of Vitamin C... And google told me, that by recent studies in Spain, Bell Peppers are high in Vitamin C and Vitamin E...



I am very happy to know this fact, as I love Bell peppers... And, I include it very often in my meal... So, today I am presenting you my favorite dish, "Spicy Paneer- Shimla Mirch". The best thing, I liked about this dish, that it gets ready in 10 minutes... It works as a perfect side dish, when unsuspected guests arrive for a dinner/lunch...



Ingredients you need to follow-

  1. Paneer - 35-40 pieces (cut in length wise)
  2. Green Bell Pepper - 1 (thinly sliced)
  3. Beetroot - 1 almond size (thinly sliced)
  4. Onion - 1/2 (thinly sliced)
  5. Garlic -4-5 cloves (minced)
  6. Green Chilli - 2 (vertically sliced)
  7. Tomato - 1 ( sliced vertically)
  8. Salt to taste
  9. Cumin seeds(zeera) - 1tsp
  10. Turmeric Powder - 1 tsp
  11. Coriander Powder - 1 tsp
  12. Cumin Powder - 1tsp
  13. Cilantro (Dhania Patta) - 1/2cup (chopped)
  14. Aamchur Powder - 1tsp
  15. Aachar Masala - 1/2 tsp
  16. Olive Oil - 3 tbsp
Directions you need to follow-  
  • Heat Olive Oil in a pan on high flame, add cumin seeds, and let it crackle.
  • Add Garlic, fry for 30 seconds and then add thinly sliced onion, and fry till it's golden brown in color.
  • Now, push onions on the side walls, and let the oil come in the center.
  • Put all spices in the oil, and cook for 30 seconds.
  • Then, toss sliced bell pepper and tomato slices in pan, and stir on high flame, for couple of minutes.
  • Reduce the flame to medium, and add Paneer slices...
  • Mix and let it get cooked for about 5 minutes, stirring occasionally.
  • Sprinkle Cilantro, and mix carefully, so that paneer doesn't break.
  • Enjoy it hot with Roti/Parantha/Tortilla.

Suzi ka halwa

One more very beautiful memory from my childhood... When I was small, my mom use to give me Suzi ka halwa and a glass of milk everyday for a breakfast, in summer vacation... After breakfast, I use to go out to play with my friends, and I am no where in sight for next 3-4 hours... That's the reason, my mom use to give me this combo for breakfast, as it keeps me full for a longer time...


And now, I make the same Halwa for my darling daughter...  This is one of the sweet dish, which doesn't take much time to get ready. So, I make it very often to offer to my God...



Here, is my mother's recipe which I want to share with you guys.

Ingredients you will need-

  1. Suzi (semolina) - 1 cup
  2. Ghee  - 3/4 cup
  3. Sugar - 1 cup
  4. Cardamom Powder (crushed elaichi) - 1/4 tsp
  5. Nuts (Almonds, Cashews -chopped)- 1/2 cup
  6. Boiling Water - 3 cups
Directions to follow - 
  • Heat Ghee in an open dry pan. 
  • After Ghee is melted, fry chopped nuts. Remove the nuts in a minute. (We do not want our nuts to get burned, so be careful and remove it fast.)
  • Now, Suzi in the same pan on medium flame, by continuously stirring, till it turns light brown in color.

  • Add cardamom powder,for couple of minutes.
  • Then, add boiling water to the Suzi mixture, stir continuously to avoid any lumps.
  • When water starts to get absorbed, add sugar and fry on high flame for couple of minutes, or till the water is completely dried up.

  • Remove the pan from flame, and add fried nuts. and mix properly.
  • Serve it hot.

Palak- Paneer Curry (Spinach- Paneer Curry)

Palak  Paneer is one of the main dish at my household, which I make every 3rd or 4th day. The reason behind making Palak Paneer so frequently is, to feed my kiddo Palak as much as possible. he do not like Palak Parantha, Alu palak, or any other variations of Palak (spinach)... Which left me with not much choice... I do create variations in making Palak Paneer. But, only this yummy process is approved by her.... I am glad to say, now I really do not have to struggle to feed my family Spinach...



Spinach, which is high in vitamins, minerals, iron, calcium and many other minerals, is very important to be eaten on regular basis.. But, our kids do not understand this... So, try this delicious recipe, and make your kids fall in love with Palak...

Ingredients-
  1. Palak (Spinach)- 2 Bowl ( boiled and grinded) 
  2. Paneer- 1 Bowl ( cut into small pieces, shapes and size as desired by you)
  3. Onion- 1 Bowl (chopped)
  4. Garlic - 2 cloves (finely chopped)
  5. Tomatoes- 1/2 small ( chopped)
  6. Warm milk- 1/2 Cup
  7. Salt to taste
  8. Tumeric Pwder- 1/2 teaspoon
  9. Coriander Powder- 1 /2 teaspoon
  10. Chili Powder-  1/2 Teaspoon
  11. Cumin Powder- 1 teaspoon
  12. Green chili's- 2
  13. Water-  1 Glass
  14. Oil- 1 small bowl
  15. Butter- 2 Teaspoons melted

Directions-
Garlic, onions, paneer
Fry Garlic, Onion and Tomatoes
  • Heat a cooking Pan, and add oil in it.
  • Add Paneer pieces, and fry till it is slightly brown. 
  • Remove Paneer and add chopped garlic and onions in the oil, stir it for 2-3 minutes and then add tomatoes, stir it and now add all the spices( turmeric, coriander powder, cumin powder and chili powder).

Boiled and grind-ed Spinach

  • Add 3-4 spoons of water in a mixture, mix the whole mixture properly on high flame.. Cover and cook for 5 minutes on medium flame.
  • Now, add spinach gravy in the mixture along with the milk, reduce the flame and let it get cooked for 10 minutes on low flame.

Fried Spinach Gravy w/ Garlic- onion paste
  • Add fried Paneer and then again cook it for another 5-7 minutes. 

Paneer added in the Gravy
  • Your Curry is ready.
  • Transfer your curry into a serving bowl and serve hot with tortilla/roti or parantha.

Paneer Samosa

I have been making Samosa's for a long time... My father was working in a semi-government office... While growing up, we were staying in a township, and sweets shop was far away from our house... Getting Samosa's every other day was not possible... So, my mom started making it... And by overtime, she became perfectionist...


I learnt making Samosa, when I was very young.. Now, I make variations in it...

My kiddo's summer vacations has started... I told her to eat all her veggies, and from last 1 week without complaining, she started in doing so... And then, when she asked me to make Paneer Samosa as her breakfast, I couldn't say no to her... But, I just had 15-20 minutes in hand... So, presenting you today Jhatpat Paneer Samosa....



Ingredients you will need for filling-

  1. Paneer - 20-25 pieces (diced)
  2. Onions - 1/2 (chopped)
  3. Salt totaste
  4. Turmeric Powder - 1/2 tsp
  5. Red Chilli Powder - 1/2 tsp
  6. Coriander Powder - 1/2 tsp
  7. Chat Masala - 1 tsp
  8. Yogurt - 2tbsp
  9. Oil - 2 tbsp 
  10. Cooking Oil to fry
Ingredients you will need for dough - 
  1. All Purpose flour (Maida) - 1 cup
  2. Wheat flour - 1cup
  3. Rice flour - 1/2 cup
  4. Semolina (suzi) - 1/4 cup
  5. Baking Soda - 1 tsp
  6. Cooking Oil - 1/4+ 1/4 cup
  7. Salt to taste
  8. Manjrela-ajwain - 1/2tsp
Directions -
  • In a bowl, mix all the ingredients for dough, and make a tight dough with hot water.
  •  Cover and left it in a warm temperature.
  • In another microwave safe bowl, mix yogurt with salt, turmeric powder, red chilli powder and chat masala.

  • Coat Paneer with this yogurt mixture.

  • Put it in microwave for 5 minutes, and let it settle down for couple of minutes.

  • In a wok, fry 2tbsp of oil, and fry chopped onions till golden brown.
  • Add Paneer Mixture in the wok now, and fry on high temperature for 4-5 minutes.
  • Take a dough equal to size of Walnut, and roll it.
  • Roll it and make it 1/8 inch thick.

  • Divide it into two.
  • Fold the edges, and stick the straight edges by water.
  • Now, it is in the shape of cone.. Fill in the Paneer filling, and stick the open edges by water.
  • Repeat the same for rest of the filling.
  • Cover the Samosa's by damp cloth.
  • Meanwhile, heat another wok with oil to fry.
  • When, oil is heated. Reduce the temperature, and wait for 5 minutes.
  • Fry all the Samosa's one-by-one, on low temperature. It will take time, but frying on low temperature will make it crispier and tastier.
  • Enjoy it with Chutney or Tomato Sos.

Lemon Apple Upside-Down Bundt Cake (eggless) #BundtBakers

Upside down cakes are my favorites.. And, I mostly love about it is a Gooey taste of my favorite fruits, mixed with the flavor of cake.. It can be created with lots of variations..



One of my favorite upside down cake is with Apple... So, thought of creating it with Lemon... A simple one ingredient can completely alter the flavor of the cake... I mostly work with eggless cakes..



Our this week's ingredient is Lemon... The fact, that I love Lemon.. I knew this is going to be one of my favorite cake... Ingredients you will need  - 
  1. All Purpose flour - 1 1/2 cup
  2. Baking Soda - 1tsp
  3. Baking Powder - 1 tbsp
  4. Salt- 1tsp
  5. Sugar - 1 cup + 1/4 cup
  6. Lemon juice - 2 tbsp ( of 1 lemon)
  7. Lemon Peel - 2 tbsp (grated)
  8. Butter - 1/4 cup
  9. Cooking Oil - 1/4 cup
  10. Yogurt - 1/4 cup (use as required)
  11. Whipping cream - 1 cup
  12. Apple - 1 (1/2 thinely sliced + 1/2 grated)
Directions you need to follow - 
  • Mix All Purpose flour with baking soda, baking powder and salt.
  • In another bowl, mix melted butter with sugar, cooking oil, lemon juice and Lemon peel.
  • In the end, add grated apple leaving aside 1tbsp of grated apple for garnishing. (I left 1 thick slice of apple ungrated, and grated just before garnishing, as apple turns black very fast).
  • Fold dry ingredients in wet ingredients.
  • Now, slowly add yogurt part by part, to make a batter,, which is more like a pancake batter.
  • Grease your Bundt pan, and place apple slices crisscross, and cover the base.

  • Pour the batter on the apple slices, and cover it completely.

  • Preheat the oven, and bake the cake at 375 degrees, or at medium temperature of your oven.
  • Bake for 30 minutes, or until your cake has passed the toothpick test.
  • After taking out from oven, let the cake rest for 10 minutes... It will leave the sides...
  • Turn it on a cooling rack, and let it cool down for 15 minutes.

  • Meanwhile, heat 1/2 cup of whipping cream till boiling point.
  • Turn the cake back in oven with apple side up.
  • Pour the hot cream on the cake, and let it soak completely...
  • After 30 minutes or so, put the cake in the fridge completely packed.
  • Next day, whip the rest 1/2 cup of whipping cream with 1/4 cup of sugar to soft peaks. 
  • Decorate your Bundt the way you want, and put some grated apple on top..
  • Enjoy...

NOTE- Leaving the Bundt for a day, enhances the taste and also helped the flavors of Apple and Lemon blend properly.






Quinoa Pulao


Quinoa- A grain which is high in protein, rich in essential amino acids and has a low gluten content... This grain is rich in Vitamins and Minerals too.. Happy to include it in my daily meal... A very thanx to my dear friend Swati Gupta​, who introduced me to this nutritional grain... It have taste of it's own. But, adapts the flavor it is cooked in...


So, presenting you today a delicious and complete meal of Quinoa Pulao..


Ingredients you need to cook for 3 people - 

  1. Quinoa - 1 cup
  2. Peanuts - 1 handful
  3. Garlic - 4 cloves (finely chopped- loved the flavor of Garlic, if you want you can reduce the amount of garlic)
  4. Onion - 1/2 (big - finely chopped)
  5. Green Chilli - 1 (chopped)
  6. Veggies (finely chopped) - 1cup (I took the combination of peas, beans, carrot and corn)
  7. Salt to taste
  8. Paneer (diced) - 1/2 cup (optional)
  9. Cooking Oil - 2 tbsp
  10. Light Soya Sauce - 1 tbsp
Directions - 
  • Add quinoa to a boiling water... Ration should be 1 cup of quinoa is to 3 cups of water.
  • Cook for 20 minutes approx... And drain the water..
  • Keep the vessel open, for quinoa to cool down.
  • In another pan,dry roast peanuts, until done.
  • Transfer it another bowl, and in the same pan heat cooking oil.
  • Fry garlic,green chilli and onions, till golden brown..
  • Add veggies, salt and stir fry until almost done.
  • Add Soya sauce and Paneer stir and add cooled Quinoa and roasted Peanuts..
  • Mix it on high flame for couple of minutes.
  • Serve it hot...

Cooking is an art... And presenting your food is another art... Well, I believe if food in front of you doesn't look appetizing to you, then you are not going to enjoy the food... So,most of the time, I try to present the meal beautifully, which attracts the family itself to the dinner table...

Every month, I bake with Bread Bakers... Every time, I try to come out of my comfort zone, and try to bake something which is new to me... This month's theme is Yeast Flat breads... Being Indian, I always make Flat Breads, as it is our staple food..... So, I decided to bake something about which I have never heard off... And google landed me to this Italian Flat bread " Focaccia". It is the best bread I ever had... So, full of flavors, and delicious... I got this recipe from All Recipes.com .... But, altered it according to my taste...

Ingredients you will need to make 2 loafs - 
  1. All Purpose flour (Maida) - 3 cups + 1/2 cup as required
  2. Rapid Rise Yeast - 1 sachet (2 1/2 tsp)
  3. Sugar - 1tbsp
  4. Olive Oil - 1 tbsp
  5. Olive Oil to spray
  6. Salt - 1tbsp
  7. Garlic Salt - 1 tbsp
  8. Italian herb - 1 tbsp
  9. Black Pepper Powder - 1/2 tbsp
  10. Parmesan Cheese and Mozarella Cheese - 1 cup
  11. Water - 1cup
Directions you will need to follow - 
  • Heat 1 cup of water to lukewarm, add sugar and yeast, stir and leave it aside for 10 minutes to froth.
  • In a big vessel, take All purpose flour, 1tbsp of Olive oil, Garlic Salt, Italian herb and  black pepper powder.

  • Whisk and add yeast mixture.
  • Knead.. The dough might be sticky.
  • Transfer the dough on the floored surface, and knead till it is well mixed,for about 5-7 minutes..You may need more flour to knead the dough.

  • Now, put the kneaded dough back in a vessel, Spray Olive Oil in it, and put the vessel in a warm temperature for 20 minutes.
  • When the dough in doubled, punch it back, and knead for a minute.
  • Divide the dough, in 2 equal parts.
  • Spread 1 part of dough, on a baking tray.
  • Meanwhile, preheat the oven.
  • Pinch the dough at a distance of 1 inch.

  • Spray it with an Olive oil.
  • Now, place slices of Onions, at some distance randomly, and sprinkle 1/2 cup of cheese on it.

  • Repeat the same, with other part of dough.
  • Now, bake it for 20-25 minutes, till it is golden brown in color.
  • Let it rest for couple of minutes.

  • Cut and serve it warm..
