Papdi Chat

At the Corner of the street, 3 men are standing with their handcart. All of them are having all types of Chat. They do all preparation, and when we want to eat, we just go to them and ask for our favorite chat.

When I was doing my Graduation Degree, next to my hostel, was a street and on that street, there was a row of people, who are standing with their Handcart and are selling all types of chat and Gol-Gappe. Everyday, me and my friends we use to have our favorite chats there as an evening snacks. I really miss those days and those yummy spicy and crunchy chat. Now, I would like to share recipe of one of my favorite chat- Papdi Chat.

Ingredients - 
  1. All Purpose Flour - 2 cup
  2. Salt to taste
  3. Semolina - 1/4 cup
  4. Cooking Oil - 1/2 cup
  5. Yogurt - 1/2 cup
  6. Tamarind Chutney - 1/2 cup
  7. Green Chutney - 1/2 cup
  8. Red Chilli Powder - 1 tbsp
  9. Aamchur Powder - 1tbsp
  10. Cumin (Jeera) Powder - 1tbsp
  11. Onion (chopped) - 1 ucp
  12. Green Chilli - 1/4 cup + 2 complete chillis
  13. Potato (Boiled and cut in pieces) - 1 bowl
  14. Choley - 2 Bowl
  15. Cilantro (chopped) - 1cup + 2cup
  16. Garlic - 2 cloves
  17. Tomato - 1 (chopped) medium size 
  18. Lemon Juice - 2 tbsp
  19. Bhujia (any brand) - 1 cup 
Directions - 

  •  Process to make Papdi-
  1. Mix All Purpose Flour (Maida) with oil and salt. Mix properly, so that oil is evenly separated. Add little amount of water (1/2 cup), and make a tight dough of the mixture. If needed, add 1tbsp of water. 
  2. Roll the dough, and with a small round cookie cutter, cut small rounds of the rolled dough.
  3. In a heated Oil, add these small round tortilla and fry them till it turns light brown in color either sides. 
  4. Put it in a separate dish to cool down.
  •  Process to make Yogurt
  1. Beat the curd, add salt and jeera powder and beat it again, add 2 tbsp of water and beat again.
  • Process to make Green Chutney -  
  1. Take 2cups of cilantro, 2 green chili's, 1tomato chopped, garlic cloves and salt in a blender jar with 1/4 cup of water. 
  2. Blend them, until the paste is fine.
  3. Add 2 tbsp of Lemon Juice in the mixture. 
  •  Process to make Choley-
  1. Follow the recipe of Choley from this Link, " Make Choley".
  • Process to make the Chat -  
         1. In a serving plate, add Papdis at a regular intervals.
 

         2. Add boiled potato and Choley, in between the Papdis.

           3. Add Green chutney, yogurt, Tamarind Chutney from above.

           4. Now, Sprinkle some chopped onion with green chilli, and cilantro.           
          5. Then, Sprinkle, some salt, red chilli powder, jeera powder and Aamchur powder.
           6. And in the end, sprinkle some bhujia from the top.
           7. Serve immediately. Enjoy...

Jalebi

Jalebi is one of the most famous sweet dish of India. It is one of those dishes which is loved by everybody, younger or elder. Every member of family loves to enjoy Jalebi's and when it comes in a combination of Rabri, it is the best sweet dish ever. In every sweet shops, we get jalebi. There are few varieties of Jalebi, and among them the most common is known as Jalebi and Imrati. The recipe of Imrati will also be following shortly. Right now, just talk about Jalebi.

I still remember, when we were small, me and my siblings, we use to wait for Independence Day and Republic Day, as we get the hot jalebis on this particular day. So, here is the delicious recipe of Jalebi for everyone.


Ingredients - 
  1. All purpose flour - 1 1/2 cup + 2 tbsp
  2. Milk - 1 1/2 cup + 1tbsp
  3. Sugar- 2 cups
  4. Cardamom Powder - 1tsp
  5. Orange Color - 1tsp

Directions - 
  • Mix All purpose flour with milk, and keep on beating for 30 minutes.
  • Cover it and keep it in the warm place for 24 hours.
  • After 24 hours, take out the mixture and again beat for 2-3 minutes.
  • Add 2 tbsp of Flour and again beat for another 10 minutes.
  • Add color and mix it for 2-3 minutes.
  • Transfer the content to the bottle which has small opening (like Sirarcha Chilli Sauce bottle, the tip of the bottle should be similar, it will make your work much easy).
  • In the heated Oil, add the content of mixture in Oil in spiral form by pressing through the bottle, start  from outside towards inside for better results.

  • Fry on either sides, till it is Golden Brown in color.

  • Take it out and add it to the Sugar syrup.

  • Soak it for 2-3 minutes, and serve it hot.

Sugar Syrup-
  • Add water and Sugar, and mix it on high temperature.
  • After the Syrup boils, add a spoon of milk and remove all the scum which collects on the surface and discard it.
  • Add Cardamom Powder.
  • Let the mixture boil for 10 minutes.
  • Close the flame, and let the Syrup cool to the Luke arm temperature.

Vrat Wale Aloo Tikki (Potato Cutlet for Fasting)

Fasting in Navratri doesn't mean, that we need to eat tasteless and bland food. Some people eat rock salt in their food and do fasting for all 9 days of the festival. Here, is 1 of the delicious Recipe for Worshipers.

Ingredients - 
  1. Potato - 4 (big)
  2. Salt or Rock Salt to taste
  3. Paneer (grated)- 1/2 cup
  4. Cashews (roasted ) - 1/4 cup
  5. Red Chilli Powder - 1/2 tsp
  6. Cumin Powder - 1tsp
  7. Aamchur powder - 1tsp
  8. Cilantro leaves - 15-16 leaves (Optional)
Directions - 
  • Boil Potato and mash.
  • Add salt, Red Chilli Powder and Cumin Powder in the mashed Potato.
Mashed Potato Mixture


  • In an another bowl, mix grated Paneer with roasted Cashews and Cilantro Leaves.
  • Add salt, red chilli Paneer with Aamchur Powder.
  • Mix it thoroughly.
Paneer Mixture
  •  Divide the whole mixture in equal 10 parts.
  • Roll it in a bowl.
  • Press it in center by a thumb.
  • Fill it with a Paneer mixture.

  • Cover it again so that it turns into a ball.
  • Deep fry it, till it turns golden brown in color.
  • Serve it hot with any Chutney or Sauce.

    Navratri Puja

    Navratri -

    Navratri is an important festival of India, dedicated to Goddess Durga. This festival is for 10 days and 9 nights. In these 9 days, 9 forms of Goddess Durga is being worshipped. The Last day of the Puja, is called as Vijyadashmi. In different parts of India, it is celebrated in different forms. It is said to be the important festival of West Bengal, Gujarat and Mumbai.

    In 2012, the Navratri dates are from 16th of Oct to 24th of Oct. Vijyadashmi is celebrated on 24th of Oct'12. Navratri is divided into sets of three days to adore three different aspects of the supreme goddess.

     

    First 3 days - 
    First 3 days of the festival is for the goddess who is known as Durga also known as Kali in order to destroy all our impurities.











    Second 3 days - 
    The Second 3 days is devoted to Goddess Lakshmi. The Mother is adored as a giver of spiritual wealth. Goddess Lakshmi, who is considered to have the power of bestowing on her devotees inexhaustible wealth, as she is the goddess of wealth.












    Third 3 Days -  
    The final set of three days is spent in worshiping the goddess of wisdom, Saraswati.













    In order to have all-round success in life, believers seek the blessings of all three aspects of the divine femininity, hence the nine nights of worship.

    Eighth day is traditionally celebrated as Durgashtami which is a big festival in  West Bengal.

    Vijayadashmi or Dashara, is celebrated on the10th day of Navratri Puja. It marks the victory of Goddess Durga over such demons as Shumbh and Nishumbh. It is a day when devotees worship Goddess Shakti. Shakti represents strength, ability and courage. This day also celebrates the victory of Lord Rama over the demon king Ravana.

    In India, the harvest season begins at this time and so the Mother Goddess is invoked to start the new harvest season and reactivate the vigor and fertility of the soil. This is done through religious performances and rituals which are thought to invoke cosmic forces that rejuvenate the soil. Many people of the Hindu faith observe Dashara through social gatherings and food offerings to the gods at home and in temples throughout Nepal and India.

    Navratri Celebrations-

    Many people in India do puja all 9 days of the festival. Some of them, even do fasting for all 9 days, and break their fasting on the last day, i.e., the 10th day of the festival. Their are many type of fasting which is done by people.
    • Fasting done for 9 days, by eating only fruits and dairy products.
    • Fasting done for 9 days, with 1meal without salt.
    • Fasting done for 9 days, with 1 meal and with rock Salt (sendha namak).
    • Fasting done for 2 days (1st and last), with only 1 meal intake with rock salt (sendha namak).
    • Fasting done for 2 days, only on fruits.
     Few foods which can be eaten during the fasting of Navratri puja are-

    1. Sabudana vada
    2. Sabudana Khichdi
    3. Alu ke Paranthe
    4. Gobhi ke Paranthe
    5. Muli ke Paranthe
    6. Paneer ke Paranthe
    7. Jeera Aalu (with Sendha Namak)

    Spicy Onion Egg Curry

    When it comes to Eggs, I am very fond of Egg Curry. Like me their must be more people, who are really fond of eggs. So, every time I am looking for a different but yummy preparation of egg. Yesterday, after some discussion with my friend, thought of giving this recipe a try. Never thought it will turn out so yummy. This is a spicy preparation and will definitely be loved by those who are looking for a different preparation. So, lets try making egg curry through this recipe. We also have some benefits of consuming eggs.

    Few benefits of eating eggs are listed below-


    1. Improves Concentration-
      Eggs provides a good nutrition which increases child’s ability to learn. It helps in increasing-
      • Concentration level
      • Math and reading skills
      • Attendance
    2. Maintains Healthy Weight-
      Eggs are the best source of protein which contains all essential amino acids for human body. Eggs are a great nutritional value for those trying to lose weight and maintain healthy weight.
    3. Brain Development-
      Egg yolk, stimulates brain development and function. Since it is necessary for brain to develop, but is not produced by our bodies in sufficient amount, a continuous new supply must be provided by our diet.
    4. Improve Eyesight -
      Lutein and zeaxanthin are antioxidants found in egg yolk and are believed to help improve eyesight and reduce the risk of age-related macular degeneration (leading cause of blindness in people over age 65 years) as well as the risk of cataracts.
    5. Prevent Blood Clots -
      Eating eggs may help reduce the risk of heart attack and stroke by prevent blood clots. An important antioxidant called selenium found in eggs inhibit clot formation in a dose-dependent.
    6. Healthy Pregnancy -
      Choline is an essential nutrient that contributes to fetal brain development and helps prevent birth defects. Two eggs provide about 250 milligrams of choline, or approximately half of the recommended daily intake for pregnant and lactating women.
    7. Strengthen Bones -
      Egg is an important source of vitamin D, which is important in bone strengthening and improving immunity.
    8. Maintain Healthy Hair and skin -
      Eggs contain protein and sulfur which together help in the promotion of healthy hair and skin.
    9. Prevent Breast Cancer -
      A study found that women who consumed at least 6 eggs per week have 44% less risk of developing breast cancer.

    Ingredients for 2 people-
    1. Egg (Bolied)- 5-6
    2. Onion - 1/2 (sliced)
    3. Garlic- 4-5 cloves (chopped)
    4. Tomato Paste- 1 tbsp
    5. Curry Leaves - 8-10 leaves
    6. Red Pepper - 4
    7. Green Chilli - 1 (sliced)
    8. Mustard Seeds - 1 tsp
    9. Salt to taste
    10. Turmeric Powder - 1 tsp
    11. Coriander Powder - 1 tsp
    12. Red Chilli Powder - 1/2 tsp
    13. Cooking Oil - 4 tbsp 
    14. Kasturi methi - 1 tbsp
    Directions -
    • Boil the Eggs.


    • Pour cool water on the boiled eggs, to peel the eggs smoothly.
    • Make few holes by a fork in all boiled eggs.


    • Heat the deep vessel and add 3 tbsp of oil.
    • Fry the eggs by stirring continuously, so that they are evenly brown from all sides, on medium flame.
    • Add remaining oil in a pan, and add mustard seeds in the heated oil.
    • Wait to let it crackle.
    • After it crackles, add Green Chilli, red pepper, Curry leaves and fry till red pepper turns dark red in color.
    • Add chopped garlic, sliced Onion and fry on medium flame for 5-7 minutes.
    • Add all spices,tomato paste and 1/2 cup of water and keep on frying, stirring occasionally for another 10 minutes.
    • Add boiled eggs and fry for 5-7 minutes, till the gravy thickens.
    • Garnish it with Kasturi Methi.
    • Enjoy it hot with rice or Hot Prantha/Tortilla.

    Precautions and Remedies from Cold for whole family

    Now, the Fall is here. Weather has started getting much cooler now. And in few days, it will be much colder. The sudden change in weather, prone to cough and cold. We need to protect ourselves and our family.

    We love our family, and it hurts when  we see them coughing or in fever especially the  small members of the family. Now, I would like to share some common home remedies for every1 in family. Spend only 10 minutes everyday in taking care of your family and give 5 minutes to yourself, and say bye-bye to cough and cold.

    Lets start with the infants (0-3 months), lets know what are the steps we should take to protect them in cold-
    1. In night, when they r sleeping, apply 1 drop of mustard oil in their feet. Cover them. (Do it only in winters)
    2. If possible, give them massage with oil (which suits their skin), before giving them bath. And if Oil massage is not possible, give them massage by moisturizer, after bath. (this is for babies older than 2 months)
    3. Do not leave your child open or in wet towel, for more than 2-3 minutes.
    4. Keep all the doors and windows closed and switch off all the fans in your room.Switch it on, when your baby is properly dressed up.
    5. Keep your babies feet covered.
    6. The sweating in babies palm and baby's warm head will tell you, he/she is feeling hot.
    7. Keep them covered from head to toe while going out.
    8. Through out the winter, Mother can eat 1 -2 cloves per day, to keep the cold away.
     If baby already had a cold, few steps you an take to help them -

    • Mother can eat a spoonful of Ajwain ( Carom) seeds with a glass of water. It will send warmth of carom seeds to the baby through mother's milk. Secondly, it will reduce the gastric problem of baby, if he/she is having it.
    Carom Seeds
    • Apply1 drop of oil in baby's feet.
    • Mother can eat 1handful of Almonds in morning and evening, it will help baby and mother both in keeping their body warm.
    • If it is possible for mother, eat cloves or I should say chew it, the warmth will go directly to the baby from her/his mother's milk.
    • Start taking care, as soon as cold starts, but do not forget to ask your doctor if he wants to recommend some medicine for child.
    Now, lets come to the Toddlers. For some toddlers it's easy to take care of them, as they will eat whatever you will ask them to eat, to protect them from cold. But, the same is difficult for the other Toddlers. So, we can make their work easy (by doing some tricks), they will not realize that they are getting protected from cold and will be healthy for the whole winter.
    • If your toddler drink flavored milk, in the milk add 1/8 th tsp of Turmeric Powder. Mix it and give it to them, once in a day. ( do it only when winter is in peak)
    • Make Almonds Confectionery (Badam ka Halwa), and give it to them 3-4 tbsp once in a day ( can do this from fall to autumn). It will keep them away from cold as well as make their bones strong.
    • Massage your Toddler from Oil which you use regularly, once a day in whole body. ( can do it whole year)
    • Apply 2 drops of Mustard Oil in feet and massage in night after they go to bed. ( in peak winter)
    • Give 1 tsp of Honey everyday. (whole winter)

    •  When your toddler wakes up in the morning, give a glass of lukewarm water to him/her. ( It will help him/her in their morning routines, as well as help in throat pain)
    And if your Toddler already has Cold -

    Mustard Oil
    • Apply 2 drops of Mustard Oil in feet and 1 drop of oil in chest and rub gently, before going to sleepin night. Cover them properly.
    • Almond Confectionery (Badam ka Halwa) 7-8 tbsp, 4 times a day.
    • If they love taste of Lemon, in a lukewarm water add 2 tsp of Lemon Juice, a pinch of Salt, mix and let them drink, 4 times a day.
    • Give 1 tbsp of Honey, 2 times a day.
    • When your toddler wakes up in the morning, give a glass of lukewarm water to him/her. ( It will help him/her in their morning routines, as well as help in throat pain)
    • If the Cold has started from allergy, immediately give them medicine prescribed by Doc or visit a Doc.
    • If he/she loves the taste of Ginger, then you can also try giving a ginger Juice. You need to Crush small piece of Ginger, extract the Juice, heat it up, till it comes to the boiling point, mix 1tbsp of Honey and give it to them to drink at room temperature.

    Ginger Juice
    • 1/2 cup of milk, mixed with a pinch of Turmeric powder, Ghee (unsalted butter) and 1tsp of Sugar.
    • If possible, give 1/2 tsp of Ajwain (Carom seeds) with water to your Child, and if not possible, add Carom Seeds in flour and make dough out of that flour and make Roti/ Parantha or tortilla for your child. You can also add 1 tsp of Carom Seeds in your curry or stew while frying. They won't even get to know that they are eating something which will keep their body warm.
    Adults are more or less same as Toddlers. Few things which we need to do are same as Toddlers-

    • Drink 1/2cup of Milk, mixed with a pinch of Turmeric Powder and Sugar.
    Turmeric Powder with Milk and Sugar
    •  Make Almonds Confectionery (Badam ka Halwa), and eat 1 bowl once in a day ( can do this from fall to autumn). It will keep you away from cold, and it's regular intake will make you less tired by the end of day.
    Almond Confectionery (Badam Ka Halwa)
    •  Apply 2 drops of Mustard Oil in you chest before going to bed. ( in peak winter)
    • Take 1 tsp of Honey twice a day. (whole winter)
    Honey
    •  Drink a glass of lukewarm water first thing in the morning. ( It will help you with the morning routines, as well as help in throat pain)
    • If you are a Morning Tea drinker, add ginger and Cloves to your tea, while it's boiling.
    Ginger

    • Take 1 clove in your mouth while going outside, and it will keep you warm (in Peak winter season).
      Cloves
    • Take 1/2 tsp of Ajwain (Carom seeds) everyday with water.

    If you already have cold, follow any 3 directions which you can do easily and comfortably-
    • Apply 2 drops of oil in chest before going off to sleep and rub gently, before going to sleeping night. And Cover yourself properly.
    • Almond Confectionery (Badam ka Halwa) 1 bowl, 4 times a day.

    Almond Confectionery
    • A lukewarm water with juice of 1 small Lemon, a pinch of Salt, mix and drink, 4 times a day.
    • Take 1 tbsp of Honey, 3 times a day.
    • Drink a glass of lukewarm water first thing in the morning. ( It will help with the morning routines, as well as also help in throat pain)
    • If the Cold has started from allergy, immediately take some medicine prescribed by a Doc or visit a Doc.
    • Crush small piece of Ginger, extract the Juice, heat it up, till it comes to the boiling point, mix 1tbsp of Honey and drink while it is still hot, but take care and do not burn your mouth.

    Ginger Juice
    • Before going to sleep, take 1/2 cup of milk, mixed with a pinch of Turmeric powder, Ghee (unsalted butter) and 1tsp of Sugar.
    • Take 1/2 tsp of Ajwain (Carom seeds) with water, everyday.

    • Your throat is paining, you are coughing and you need to go to work, one simple solution, take 2 cloves in your mouth, keep it inside the cheeks, and let it be there, the juice of cloves will soothe your throat and coughing will reduce. Keep some spare cloves in your bag.
    And, last but not the least, do remember to brush your teeth and clean your mouth with Listerine, everyday before going to bed ( it will reduce the chances of bacteria to develop). Do it everyday for your Toddler. And for your Infant, clean their mouth wit a wet tissue, every time they take a feed. Those little ones who are more than 3 months old, their mothers can dilute Listerine by 1:20 ratio and clean their tongues by her fingers. It will keep their mouth fresh for a longer time.
