Papdi Chat

At the Corner of the street, 3 men are standing with their handcart. All of them are having all types of Chat. They do all preparation, and when we want to eat, we just go to them and ask for our favorite chat.

When I was doing my Graduation Degree, next to my hostel, was a street and on that street, there was a row of people, who are standing with their Handcart and are selling all types of chat and Gol-Gappe. Everyday, me and my friends we use to have our favorite chats there as an evening snacks. I really miss those days and those yummy spicy and crunchy chat. Now, I would like to share recipe of one of my favorite chat- Papdi Chat.

Ingredients - 
  1. All Purpose Flour - 2 cup
  2. Salt to taste
  3. Semolina - 1/4 cup
  4. Cooking Oil - 1/2 cup
  5. Yogurt - 1/2 cup
  6. Tamarind Chutney - 1/2 cup
  7. Green Chutney - 1/2 cup
  8. Red Chilli Powder - 1 tbsp
  9. Aamchur Powder - 1tbsp
  10. Cumin (Jeera) Powder - 1tbsp
  11. Onion (chopped) - 1 ucp
  12. Green Chilli - 1/4 cup + 2 complete chillis
  13. Potato (Boiled and cut in pieces) - 1 bowl
  14. Choley - 2 Bowl
  15. Cilantro (chopped) - 1cup + 2cup
  16. Garlic - 2 cloves
  17. Tomato - 1 (chopped) medium size 
  18. Lemon Juice - 2 tbsp
  19. Bhujia (any brand) - 1 cup 
Directions - 

  •  Process to make Papdi-
  1. Mix All Purpose Flour (Maida) with oil and salt. Mix properly, so that oil is evenly separated. Add little amount of water (1/2 cup), and make a tight dough of the mixture. If needed, add 1tbsp of water. 
  2. Roll the dough, and with a small round cookie cutter, cut small rounds of the rolled dough.
  3. In a heated Oil, add these small round tortilla and fry them till it turns light brown in color either sides. 
  4. Put it in a separate dish to cool down.
  •  Process to make Yogurt
  1. Beat the curd, add salt and jeera powder and beat it again, add 2 tbsp of water and beat again.
  • Process to make Green Chutney -  
  1. Take 2cups of cilantro, 2 green chili's, 1tomato chopped, garlic cloves and salt in a blender jar with 1/4 cup of water. 
  2. Blend them, until the paste is fine.
  3. Add 2 tbsp of Lemon Juice in the mixture. 
  •  Process to make Choley-
  1. Follow the recipe of Choley from this Link, " Make Choley".
  • Process to make the Chat -  
         1. In a serving plate, add Papdis at a regular intervals.
 

         2. Add boiled potato and Choley, in between the Papdis.

           3. Add Green chutney, yogurt, Tamarind Chutney from above.

           4. Now, Sprinkle some chopped onion with green chilli, and cilantro.           
          5. Then, Sprinkle, some salt, red chilli powder, jeera powder and Aamchur powder.
           6. And in the end, sprinkle some bhujia from the top.
           7. Serve immediately. Enjoy...
