Hot Cocoa Almond Bundt Cake #BundtBakers

Life suddenly seems to got busy for me. I do took out time to cook, and bake. But, most of the time, I forgot to click the picture of these delicious dishes.

And then 1 day, I realized my readers are getting compromised because of my schedule. So, I  decided to bake an easy and special cake for my readers. And came around this event of Bundt Bakers. The theme this month, is Hot Chocolate. Well, chocolate is my all time favorite. I even carry, few chocolate in my lunch bag. When,I do not get time to eat lunch, and I am hungry, Chocolate works as a great energy booster for me.

This month's theme is Hot Chocolate, and is hosted by a wonderful cook and a baker, Tara, who also runs a blog, " Noshing with the Noland." Check out some delicious recipe here by her.

Ingredients you will need to bake this delicious and easy cake
  1. All Purpose flour - 1 1/2 cup
  2. Milk Powder - 1 cup
  3. Baking Soda - 1tsp
  4. Baking Powder - 1tbsp
  5. Salt- 1 pinch
  6. Chocolate Powder - 1/2 cup
  7. Cocoa Powder - 1 tbsp
  8. Hot water - 1cup
  9. Sugar - 1 cup
  10. Olive Oil - 1 cup
  11. Sour Cream - 1/2 cup
  12. Almond (crushed) - 1/2 cup + 1/2 cup

Directions to follow - 
  • Mix Cocoa powder and Chocolate powder, in a hot water.
  • Let it rest, meanwhile mix Flour with Milk Powder, Baking Soda, Salt and Baking Powder.
  • In another bowl, mix sugar, with olive oil and Sour Cream.
  • Now, add Cocoa mixture in Sugar mixture. Mix properly, so that it is properly mixed.
  • Add dry flour mixture, to this wet mixture, mix and add 1/2 of crushed Almonds to the batter. Mix it with light hand. And let it sit for few minutes.
  • Preheat your oven, coat your Bundt Pan with Oil.
  • Sprinkle the rest of Almonds in the pan evenly. Spoon the batter in the pan, trying not to disturb sprinkled Almonds.
  • Now, bake you cake, for about 40 minutes, or till the toothpick comes out clean.
  • After the cake is baked, keep it on the counter to cool down a bit, atleast 15-20 minutes.
  • Then invert the pan, on a cooling rack.

  • Let the cake cool down, sprinkle some powdered sugar, and serve it a dollop of ice-cream... Yum yum....

Cilantro and Garlic Oat Bread #BreadBakers

I wanted to bake a flavored bread loaf from a long time..... When, I say long time, it really means a very long time... Well, I had this desire from around a year.. But, somehow I was never able to do it... When I learnt this month's theme is whole grain, I knew what I am going to bake, as I have already baked it in my mind, lot of times....

I actually wanted to make Quinoa bread.... Right from starting everything was working perfectly fine... But, don't know where did I went wrong.. After coming out of Oven, the bread went down from the center... It was also tasting as it is half cooked, but I did bake it for 40-45 minutes, and the bread was brown in color, when I took it out from Oven... I need to again bake the same bread, and see what actually made my bread to sink in center..

So, I decided to shift for another plan, and bake bread with another Whole grain- Oats.... This one worked out perfect.... I didn't refer any recipe for this one, just worked on my instincts. And I am glad I did, as it turn out to be perfect...

Ingredients you will need - 

  1. All Purpose flour (Maida) - 3- 3 1/2cups
  2. Cilantro - 1 cup 
  3. Garlic - 4 cloves 
  4. Olive Oil - 4 tbsp
  5. Yeast - 1 packet (2 1/4 tsp)
  6. Rolled Oats - 1 cup
  7. Water - 1 cup
  8. Sugar - 1 tbsp
  9. Salt to taste
Directions to follow- 
  • Chop Cilantro and Garlic.

  • Heat a cup of water in a microwave for 1 minute... Now, add a tbsp of sugar and a pinch of salt in the warm water.. Mix, and add Rapid rise yeast, and leave it aside for 10 minutes.

  • In a big vessel, take All Purpose Flour. Add chopped Garlic and Cilantro. And mix.

  • Meanwhile, take a cup of Oats, add same amount of water and heat in microwave for 3 minutes on high power.

  • Now, add the oats in the flour mixture, and mix.

  • Now, it's time for yeast mixture to get added to the flour mixture.

  • Mix it with Spatula. It will be a very sticky mixture. Spray Oil above the dough and leave it in warm temperature for an hour.

  • In an hour, the dough will rise double in size.
  • Knead this dough for 5-7 minutes... Keep on adding rest 1/2 cup of flour as needed, while kneading dough. 
  • Now, make the pan ready by spraying oil all over the pan.
  • Put the dough in a pan, press that dough reached to all corners of pan.
  • Spray the oats on the dough.

  • Keep it in a warm temperature for 45 minutes. The dough will again rise.

  • Spray oil on top.
  • Preheat the oven.
  • And let the bread cook for 35-40 minutes at 350 degrees,or till light brown.
  • When the bread is done, let it cool down for 10 minutes, and it will leave the pan.
  • Invert and let the bread cool down.

  • Now, enjoy this delicious flavorful bread with a dash of butter.

Eggless Vanilla Confetti Bundt Cake #BundtBakers

I have a soft corner for cakes, and when it comes to homemade Eggless cakes, no one can control me... Though I love cakes, but when it is loaded with cream, I try not to eat, as it contains too much of sugar..

When my kiddo was small, every time I am making cake, she wants me to decorate it with cream, and then put some extra cream in her piece of cake... So, all my liking vanishes by the time, it's my turn to eat my piece of cake.. Well now, after all these years, she has developed same taste as me... Yayyyyyy, no more cream in our daily desserts.. So, I decided to make something which qualifies for this month's theme, perfect for my taste buds, and is approved by my kiddo, without a hesitation...  Vanilla Confetti Bundt Cake.. Isn't it looking beautiful...

I believe in making food in easier ways.. When I can make food fast and get the same taste in my food, why to take longer route.. So, I am always looking for easier recipes.. This recipe is inspired from 1 of my first cakes " Vanilla-Almond Cake". Little bit of changes in ingredients, and I got a delicious, beautiful cake.

List of this month's "Sprinkles" Bundts:

Ingredients you will need - 
  1. All Purpose flour - 1 1/2 cup
  2. Milk Powder - 1 cup
  3. Baking Powder - 1 tbsp
  4. Baking Soda - 1 tsp
  5. Sugar - 3/4cup
  6. Cooking Oil - 3/4 cup
  7. Evaporated Milk - small can (as required)
  8. Vanilla Essence - 1 tbsp
  9. Sprinkles - 1/2 cup
Directions to follow - 

  • Mix all the ingredients in a big bowl except evaporated milk and sprinkles.
  • Add evaporated milk as required, and make a batter which is thicker than pancake batter. (Best way to know the thickness of batter, is drop it by ladle back in a bowl, and it should not free fall. Between 2 drops, it should break.)

  • Now, add Sprinklers but do not stir much, as we don't want these sugar crystals to melt in the batter.

  • Grease the pan, and make it ready. Preheat the oven, meanwhile pour the batter in a pan. And put sprinkles randomly.

  •  Bake the cake at 350 degrees, for about 35-40 minutes, till the toothpick comes out clean.

  • Let the cake cool in a pan itself for 10 minutes, and then invert the cake in a cooling rack for a hour.

  • Now, enjoy........ 

  •  Oh, I am in so much in love with this cake, this weekend I am again going to make it for sure.

Chocolate Chip Cookies #CreativeCookieExchange

Well, today I will share with you guys, how my cookie journey started. I started making cookies,1st time when my kiddo turned 2, and we visited Las Vegas. I normally carry lots of homemade snacks with me, but somehow while returning back from the trip, most of them was finished. So, I got a pack of Chewy Chocolate Chip Cookies, if in case she don't want to eat anything, these cookies will work (sweet stuffs always help me in keeping her quite). 

Though I loved them, she maintained a distance with those cookies. As she loves Chocolate, so I thought of giving this simple and very easy recipe a try... Being a novice, I nailed it... And it became my go to recipe.. Whether it is a road trip, or a snack time in school, it does it's magic all the time.. 

I adapted this recipe from All, but omitted walnuts, as somehow the taste of Walnut was not going perfect with these cookies.

Ingredients you will need (makes about 48 cookies)- 
  1. All Purpose flour (maida)- 3 ups
  2. White Sugar- 1 cup
  3. Brown Sugar - 1 cup
  4. Unsalted Butter - 1 cup (softened)
  5. Eggs - 2
  6. Vanilla Extract (not imitation)- 2tsp
  7. Baking Soda- 1tsp
  8. Hot Water - 2tsp
  9. Salt - 1/2tsp
  10. Semisweet Chocolate Chip - 2 cups

Directions you will need-
  • Mix All Purpose flour (maida) with White Sugar.

  •  Add Brown Sugar and softened butter, stir.

  •  Mix Baking Soda with hot water.
  • Add in eggs, Vanilla essence and soda mixture to the flour mixture and mix.

  •  Now, add Chocolate Chips, and stir. 

  • In a scoop of 1/4th cup, fill in dough.. Make a ball of this amount of dough, and then break in 2 parts.

  • Place on the cookie tray at 1 inch apart, with a broken texture on the top and bake in preheated oven at 350 degrees for 10 minutes, or until the edges are nicely browned.
  • I love to eat, atleast couple of them, when they are still little warm.
  • Keep it in airtight container, and it will last for a month (if any of your family member loves chocolate,it's not going to last more than a week).

Makhmali Paneer

Paneer is all time favorite of my kiddo. I always keep some emergency Paneer in my fridge, when she doesn't want to eat anything, Paneer comes to my rescue..

Yesterday, was my fridge empty day, so didn't cook anything for dinner. All the leftovers was supposed to be finished... My husband told me, next day, that is, today he won't go to work, and will work from home... I was happy, that  don't have to cook anything in morning.. Then, before sleeping he told me, he has to go to office tomorrow for some urgent work, and he will leave by 7:30. Now, I was totally confused what to make for his tiffin.

Normally, my next day menu is decided a day ahead, and I do my preparations night before. Since, no preparations was done, so only dish I could think of was of Paneer.

So, here is the amazing dish I tried. It was my hit an trial method, but surely it worked... The best part it took me about 15 minutes to make this curry ready. The satin smoothness of gravy, made me think of it's name as "Makhmali Paneer".

Here, is the delicious recipe for you to try -

Ingredients you will need-

  1. Paneer - 35-40 pieces
  2. Onion - 1/2 big(sliced)
  3. Garlic - 3-4 cloves
  4. Peanuts - 1 handful
  5. Cumin seeds - 1tbsp
  6. Cloves - 2
  7. Cinnamon stick - 1- 1inch thick
  8. Black Pepper - 4-5
  9. Melted Butter/Ghee - 2 tbsp
  10. Salt to taste
  11. Turmeric Powder - 1tsp
  12. Red Chilli Powder - 1/2 tsp
  13. Aamchur Powder - 1tsp
  14. Tomato Paste- 1tbsp
Direction to follow - 
  • In a pan, add onion, garlic, peanuts, cumin seeds, cloves, cinnamon stick and black pepper with a glass of water, and boil for 10 minutes, or till the onions become little soft.

  •  Let it cool down, and grind it in mixture.

  •  In the same pan, heat and add 2 tbsp of melted butter or ghee, and add this onion mixture, and fry fr 5 minutes.

  •  Add Salt, turmeric powder, red chilli powder, Aamchur powder and tomato paste., and saute for few minutes, till it starts leaving the sides.

  •  Now, add a glass of water and boil for couple of minutes.

  •  Add Paneer pieces, and boil for 5 minutes.

  •  Your Paneer curry is ready.. Enjoy it hot with Roti/ Parantha.
