Spinach Potato Sandwich

Today I am back with the delicious and healthy Sandwich. It tastes great, gives a perfect green color in between. Spinach is playing hide and seek here. kids don't even get to know that they are taking their daily dose of spinach in this meal. It's the most easiest recipe to make. As you know, I prefer doing preparation in advance. It helps me in preparing food in no time. So, the only preparation I did was boil couple of potatoes a night before. Ingredients you need for 4 people - Potatoes (big)- 2 boiled and smashed Onion(big) - 1/2 diced + Onion roundels Cumin seeds - 1tsp Oil-  2tbsp Salt to taste Turmeric Powder - 1tsp Coriander powder - 1 tbsp Red Chilli powder - 1/2 tsp Spinach - 1 bowl Butter as needed Bread - 8 slice Directions to follow - In a heated pan, add oil and after heating add cumin seeds and let it crackle. When I moved to California, I had no friends, was completely lonely. Was looking for people with like minded people, and met an awesome woman whose son was also in my kid's class. I got this recipe for my this awesome friend, her name is Sulakshna. This recipe is her special recipe, and my this post is dedicated to her. It's a typical way of making sabudana Khichdi in state of Maharashtra in India. In last few years I have learnt planning is the key to happiness. I am a full time working mom, whose in-laws also lives with her. Finishing household work with full time job and maintaining passion for cooking is actually a challenge. And which eventually leads to minimal cooking. I got this Appe Pan, after a big thought... Saw so many posts in facebook groups, of Appe-Pan using less oil. .Though the idea, was very appealingfor me, but I wante to get this product from India.. When, my hubby went to India, unfortunately he didnot get this amazing Pan for me.. And, somehow, the Indian stores also stopped carrying them... Then, I thought of searching all stores in Bay Area.. And I got this Pan, in Coconut Hill.. Now, I completely agree with my friends, who says this pan gives an amazingly delicious food. I have been on spree of eating healthy in last few days... I have tried many dishes, few of them set exactly on my taste buds, and Shahi Soya Appe is one of them.... It is very easy to make, full of protein but too delicious to eat.. Even, my kiddo couldn't stop herself in 1... Preparation time needed only for boiling 1 Potato and chopping some onions, and you are done.... Crispy Bread Cigar Rolls

Bread Cigar Rolls, are one of biggest hit rolls at my place.. I started making it first, when my kiddo started her school, and that was about 5 years back... She is now 8, and still this is one of the lunch which is still loved by her... Whenever these rolls goes in her lunch, she finishes her lunch... I make it atleast once in a week.. She says it stays crisp till her lunch time.. Isn't tht good... The best thing, I like about these rolls are, they are very easy, non-oily as they are pan fried and can be made in little notice of time, with all dry cooked veggies and minced kababs can be used in these rolls, whatever is available can be used in these rolls.... I have been making Samosa's for a long time... My father was working in a semi-government office... While growing up, we were staying in a township, and sweets shop was far away from our house... Getting Samosa's every other day was not possible... So, my mom started making it... And by overtime, she became perfectionist... I learnt making Samosa, when I was very young..
