Spinach Potato Sandwich

Today I am back with the delicious and healthy Sandwich. It tastes great, gives a perfect green color in between. Spinach is playing hide and seek here. kids don't even get to know that they are taking their daily dose of spinach in this meal.

It's the most easiest recipe to make. As you know, I prefer doing preparation in advance. It helps me in preparing food in no time. So, the only preparation I did was boil couple of potatoes a night before.


Ingredients you need for 4 people -

  1. Potatoes (big)- 2 boiled and smashed
  2. Onion(big) - 1/2 diced + Onion roundels
  3. Cumin seeds - 1tsp
  4. Oil-  2tbsp
  5. Salt to taste
  6. Turmeric Powder - 1tsp
  7. Coriander powder - 1 tbsp
  8. Red Chilli powder - 1/2 tsp
  9. Spinach - 1 bowl
  10. Butter as needed
  11. Bread - 8 slice

Directions to follow -

  • In a heated pan, add oil and after heating add cumin seeds and let it crackle.
  • Add diced onions and saute until translucent.

  • Add chopped spinach and saute till it reduces to half.

  • Add all spices and fry on high flame.


  • Now, add boiled mashed potatoes and fry.

  • Filling for sandwich is ready.


  • Take 2 slices, spread butter on either side. On 1 slice, add filling and onion rounds.



  • Cover it with another slice.



  • Toast on medium flame, until the bread is crisp on either side. 
  • Serve it hot with Tomato ketchup.
  • Enjoy..
