Potato Sandwich

Ingredients for 2 people-

  1. Potato- 2 (Boiled)
  2. Onion - 1 small(Chopped)
  3. Green Chilli - 2 (chopped)
  4. Salt to taste
  5. Black Pepper powder - 1/2 tsp
  6. Chat Masala - 1 tsp
  7. Bread - 4 Slice
  8. Oil-4 tsp
Directions - 

  • Mash the potato, In a heated pan add Oil w/chopped onion, green chilli, salt, black pepper powder and chat masala, Mix them together. Add mashed Potato in the mix and saute at high flame for 5 minutes, until it is well mixed.
  • Apply this mixture on 1 slice of bread, cover it with another slice.
  • In another heated pan, Add a spoon of oil and cook the sandwich on either side, until it's a liht brown in color.
  • Enjoy it hot either with Tomato sauce or Cilantro chutney.

Potato Lasagna

Ingredients for 8 people -

  1. Lasagna noodles- 1 lb
  2. Potato (Boiled and mashed) - 3 big
  3. Paneer or firm tofu - 1/2 lb
  4. Garlic -2 cloves (peeled and minced)
  5. Lemon Juice - 2 tbsp
  6. Salt to taste
  7. Pasta Sauce - 4-6 cups as required

Directions -

  • Boil Lasagna Noodles and drain the water and keep aside.
  • Preheat oven to 350 degrees F.
  • Mash Potato and mix it with paneer or tofu, salt, lemon juice, garlic and milk, add it to the food processor and process until it is blended smooth.
  • At the bottom of 9X 13 inch pan, lay a thin layer of pasta sauce, then a layer of noodles, with a following layer of Potato - paneer(tofu) mix, then half of the rest pasta sauce, with a layer of noodles, potato mix, layer of noodles and end with a layer of pasta sauce.
  • Bake for 40-45 minutes or until it is bubbling.
  • Enjoy it hot.
  • Can be refrigerated and reused for a week.

Mutter-Mushroom Pulao (Rice cooked w/ Peas and Mushroom)

Ingredients for 2 people-
  1. Rice - 4 handful
  2. Onion - 1/2 big Onion (sliced)
  3. Peas - 1 small cup
  4. Mushroom  - 5 mushroom (sliced)
  5. salt to taste
  6. Safflower - 1 pinch
  7. Cloves - 2-3
  8. Almonds - 1/2 small cup
 Directions - 
  • Wash rice, drain out the water and keep it aside for 10 minutes.
  • In an empty heated pan, fry washed sliced mushroom. It will start leaving water, fry till all the water is evaporated.
  • Take the mushrooms out of oan, and add 1 tbsp of oil in the same pan.
  • Add Onions and saute till it turns light brown in color.
  • Add Peas and Mushroom, slat and fry them for another 2-3 minutes.
  • Add salt, washed rice, cloves and Safflower, and fry them for another minute or 2.
  • Add double amount of water, compared to rice.
  • Let it get cooked open in a pan at high flame for another 10 minutes.
  • By the time water gets evaporated, rice will be cooked.
  • Enjoy it hot with Yogurt/ Stew.
  • Garnish it with small pieces of Almonds.

Egg Chowmein

Egg Chowmein - A Perfect meal for weekend.


Ingredients for 2 People-
Time to prepare- 10 minutes.
Time to cook- 25 minutes
Egg Chowmein
  1. Spaghetti
  2. Oil - 2 tablespoon
  3. Salt to taste
  4. Bell Pepper- 1/2 chopped
  5. Carrot - 1/2 chopped
  6. Onion - 1/2 chopped
  7. Potato - 1 Small
  8. Soya sauce - 2 tbsp
  9. Mustard sauce - 1 tbsp
  10. Chilli Sauce - 1tbsp
  11. Tomato sauce - 2 tbsp
  12. Egg - 4 Whole
Directions - 
  • Boil Spaghetti, til the time it becomes soft and properly cooked. 
  • Drain all the water and keep it separately and let it cool down.
  • Take oil in a dry pan and heat it. Add all vegetables in the oil when heated, add salt and cover the pan. When the vegetables are cooked, add tomato sauce, mustard sauce, chilli sauce and soya sauce in it. Mix it well. Now, add spaghetti in the mixture , mix it well on high flame.
    Boiled Spaghetti
    In another Pan, add 1tsp of Oil and break all eggs in it, add salt, black pepper powder. Stir it, to mix properly. Mash by Spatula and them mix it again on high flame, repeat the process for 10 minutes.
    Mix this egg mixture to already made spaghetti.
    Enjoy this delicious Egg Chowmein hot.
