Almond eggless Cookies (Eggless Badam Ke Biscuits)

Ingredients  - Almonds- 1/2 cup All purpose flour (Maida)- 1 cup Baking flour- 3/4 tsp Unsalted Butter/Ghee - 1/2 cup Sugar- 1/2 cup Milk - 2tsp  Directions- Mix All Purpose flour with a baking powder in a bowl. In another bowl, mix unsalted butter with sugar and milk, and blend it well. Take 5 almonds and divide in 2 halves. Break rest of the almonds in small pieces and mix it to the flour mixture. Add flour mixture to the sugar mixture,and make a dough out of it. Divide the dough in equal 10 parts and make small rounds of each part. Press the ball and decorate it with half cut almonds. Keep it on the oiled tray in already heated Oven at 350 degrees for 15 minutes. Take it out and let it cool down.

Vegetable Sandwich

Ingredients for 2 people- Vegetable Sandwich Potato- 1 (Boiled) Onion - 1 small(Chopped) Green Chilli - 2 (chopped) Cabbage - 1 cup (chopped) Salt to taste Black Pepper powder - 1/2 tsp Chat Masala - 1 tsp Tomato Sauce - 2 tsp per sandwich Bread - 4 Slice Oil-1 tsp Directions -  Ready Potato Mixture Mash the potato, add chopped onion, green chilli, cabbage, salt, black pepper powder and chat masala, Mix them together. Put the 2slice of bread in a toaster and toast it till it turns light brown in color. Apply a layer of tomato sauce in 1 slice of bread. Apply 1/2 inch thick layer of potato mixture and spread it all over the slice of bread. Cover the bread from another slice of bread. On a heated pan, add 1tsp of oil and cook the sandwich on both sides for 30 seconds. Serve it hot with tomato sauce or Cilantro chutney .

Vegetable Cutlet

Ingredients- Vegetable Cutlet Potato- 2 (Boiled) Onion (Small)  - 1 (Chopped) Green Chilli - 3 Cabbage - 1 cup (Chopped) Green Peas - 1 (Boiled) Bread Crumbs - 1 Cup Salt to taste Black Pepper powder - 1 tsp Directions-   Mash Potato in a vessel. Mix all ingredients except bread crumbs, together. Divide the Potato Mixture in 6 equal parts. Ready Mixture Ready to Cook Make a small ball of each part. Take oil in a palm and Roll it over the bread crumbs. Make the shape of cutlet. Add a spoon of oil in a pan, add cutlet in it and fry from all sides, till it turns golden brown in color.                                                     OR           Brush the cutlet by oil and keep it inside the Oven for 10 minutes or till it turns golden brown in color. Garnish it with a chopped Cabbage, sliced onion and carrot. Enjoy it hot with tomato Sauce.

Vegetable Pulao

Vegetable Pulao Ingredients- Basmati Rice - 1cup Green Peas (Frozen/ fresh) - 1 cup Carrot- 1 big (chopped) Potato - 1 medium size (chopped) Cauliflower - 2-3 flowers (chopped) Onion - 1/2 big (chopped) Cumin seeds (jeera)- 1tsp Cinnamon sticks (Dal Chini) - 2 Cloves(laung) - 2 Black Cardamoms (badi elaichi) - 2 Bay leaves (Tej Patta)- 2 Ghee/ Olive Oil - 1tsp Water - 2cups Salt to taste Black Pepper Powder - 1/4 tsp Raisins - 1/2 small cup Almonds - 12-15 (cut in small pieces) Directions-  Wash and soak rice for 20 minutes. After 20 minutes, drain excess water and keep aside. In a Pan, add 2 tbsp of ghee or Olive Oil. Add Cumin seeds, Cinnamon, Cloves, Black Cardamoms, Bay leaves, Salt and chopped onion and stir it for 2 minutes on high flame. Add all other vegetables with soaked rice and 2 cups of water, cover it and on medium floame let it get cooked for another 9-10 minutes. Add raisins and almonds and stir the pulao. Allow it to stand for 5 minutes

Masala Mushroom

Masala Mushroom Ingredients-  Mushrooms - 7-8 Big (Sliced) Onion - 1/2 ( finely chopped0 Ginger piece - 1" (cut in strips) Garlic cloves - 3-4 (finely chopped) Tomato - 1 big (chopped0 Oil - 1tsp Salt to taste Turmeric Powder - 1/4 tsp Red Chilli Powder - 1/4 tsp Garam Masala Powder- 1/4 tsp Chat masala - 1/2 tsp Black Pepper Powder - 1/4 tsp Cilantro - 1/2 cup (to garnish) Directions -  Add sliced Mushroom in an empty pan for 5 minutes or till all the water of mushroom gets dried up. Take it out in an another vessel. Heat Oil in a same Pan for a minute. Add chopped Onion, Garlic and Ginger, and saute it on high flame for 2 minutes. Add tomato and spices, saute and let it get cooked for 2-3 minutes, covered. Add Mushroom and stir it for 3-4 minutes, covered.  Add 1 cup of water, saute and let it get cooked for another 10 minutes, covered on medium flame. Garnish it with chopped Cilantro and ginger strips. Serve it hot with chapati/ Parantha or nan

Mint leaves Chutney

Ingredients -  Mint Chutney Mint leaves- 1 bundle Tamarind pulp (soaked and seeds removed)- 1/2 cup Salt to taste Red Chilli- 2 Garlic cloves - 2-3 Directions - Mix Mint leaves with tamarind pulp, garlic cloves, salt and red chilli. Grind them together.

Vanilla-Almond Cake

Ingredients - All purpose flour - 2 cups Sugar - 3/4 cup Milk powder - 1 cup Cream - 1 cup Cooking oil - 1 cup Baking powder - 1 tsp Vanilla drops - 2 tsp Almonds - 1cup (raw-break in small pieces) Directions - In a big bowl, mix all purpose flour, milk powder and baking powder. In another Bowl, mix sugar, cream, Vanilla drops and cooking oil together, mix to make all the sugar crystals dissolved. Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously. Add a cup of milk as required to make the batter thin, thin enough to make the spoon move easily in the batter. Mix almond pieces in a batter. In an oven cooking pan, Spray some oil with little of flour all over the pan. Transfer the batter in a pan. Cook inside the oven for 30-35 minutes at 350 degree F temperature. Take it out, insert a toothpick in the center of cake, it comes out clear, your cake is done, If no put it again for 5 minutes, and repeat the process. Put the cake outsid

Egg - Burger

Egg- burger Ingredients for 2 people- Burger Buns - 2 buns Lettuce - 1 leaf (chopped) Red Onion - 1/2 small cup (sliced) Left over stew- 4 tsp (mashed) Tomato Sauce - 2 tsp  Oil - 2 tsp Salt to taste Black Pepper Powder - 1 tsp Egg - 2 nos. Directions- In an Open pan, add a tsp of oil, heat it, spread it all over the pan and break egg in the oil evenly spreading it making it a size of a bun. Sprinkle salt and black pepper powder before egg gets cooked. Turn it over and cook it on other side. Toast your Burger buns in a toaster. Put a layer of 2 tsp of mashed stew. Add chopped lettuce, sliced onion above that and at the top add Egg Pouch. Keep the other half from the top. Enjoy it hot.

Burger w/left overs

Ingredients- Burger Buns - 2 buns Lettuce - 1 leaf (chopped) Red Onion - 1/2 small cup (sliced) Tomato - 1 (sliced) Left over stew- 4 tsp (mashed) Tomato Sauce - 2 tsp Directions- Toast your Burger buns in a toaster. Put a layer of 2 tsp of mashed stew. Add chopped lettuce, sliced onion above that and at the top add sliced tomato. On the other half of bun, add a layer of tomato sauce. Enjoy it hot.
