Vegetable Pulao

Vegetable Pulao
Ingredients-
  1. Basmati Rice - 1cup
  2. Green Peas (Frozen/ fresh) - 1 cup
  3. Carrot- 1 big (chopped)
  4. Potato - 1 medium size (chopped)
  5. Cauliflower - 2-3 flowers (chopped)
  6. Onion - 1/2 big (chopped)
  7. Cumin seeds (jeera)- 1tsp
  8. Cinnamon sticks (Dal Chini) - 2
  9. Cloves(laung) - 2
  10. Black Cardamoms (badi elaichi) - 2
  11. Bay leaves (Tej Patta)- 2
  12. Ghee/ Olive Oil - 1tsp
  13. Water - 2cups
  14. Salt to taste
  15. Black Pepper Powder - 1/4 tsp
  16. Raisins - 1/2 small cup
  17. Almonds - 12-15 (cut in small pieces)
Directions- 
  • Wash and soak rice for 20 minutes. After 20 minutes, drain excess water and keep aside.
  • In a Pan, add 2 tbsp of ghee or Olive Oil.
  • Add Cumin seeds, Cinnamon, Cloves, Black Cardamoms, Bay leaves, Salt and chopped onion and stir it for 2 minutes on high flame.
  • Add all other vegetables with soaked rice and 2 cups of water, cover it and on medium floame let it get cooked for another 9-10 minutes.
  • Add raisins and almonds and stir the pulao.
  • Allow it to stand for 5 minutes, and then serve hot with dal (lentil) or curry.
