Mixed Vegetable Burger

  1. Cauliflower - 1 cup
  2. Cabbage - 1 cup (chopped)
  3. Onions - 1 cup (chopped)
  4. Carrots - 1 cup (chopped)
  5. Bell Peppers - 1 cup (chopped)
  6. Green Peas - 1 cup
  7. Tomato - 1 small whole (2-2/5" dia)
  8. Salt to taste
  9. Black Pepper Powder - 1 tsp
  10. Red Chilli Pepper - 1 Tsp.
  11. Lemon Juice - 1 fl. oz.
  12. Tomato Sauce - 1 oz.
  13. All Purpse Wheat Flour - 4 tbsp
  14. Whole Milk - 2 cups
  15. Burger Buns - 1 serving
  16. Canola/Vegetable Oil- 1 oz.
  17. Garlic - 1 Tsp. (minced )
  18. Potatoes (Peeled and diced) - 1 large
  19. Yellow Sweet Corn - 1 cup
  20. Beets - 1 cup
  21. Sliced Mushrooms - 1 cup
  22. Royal Red Kidney Beans - 1 cup (Soaked and Boiled)
Directions –

  • In a kettle, boil milk. When boiled add lemon juice into the milk which will separate the whey and fat in the pan. Pour through cotton cloth to remove all the whey from the fat.
  • Wash the vegetables, put in a microwavable bowl with water and microwave for 12 minutes on high temperature.
  • Drain the water and let the vegetables cool down for 10 minutes.
  • Mash the vegetables and add flour with salt, black pepper, and red pepper.
  • The consistency of batter will be semisolid.
  • Gently drop batter in a preheated pan and press by same spoon and give the shape of patty.
  • If you wanna cook in oven, then Spray baking sheet with oil and add patties, keeping small distance between patties, Place baking sheet in oven preheated to 450 degrees and bake for 10 minutes.
  • After 10 minutes, take the baking sheet out and turn all the patties, then bake for another 10 minutes.
  • In the meantime, put the burger buns in a bread toaster to warm them, then take out.
  • Spread a layer of tomato sauce on half a bun, add a layer of crushed paneer, then a patty,  a sliced tomato, and finally the other half of the bun.
  • Serve it hot.

Gajar ka Halwa (Carrot Fudge)

Gajar ka Halwa

Ingredients for serving 10 people-
  1. Carrot - 5-6 (grated)
  2. Milk - 2 Big cups
  3. Khowa - 1 Small cup
  4. Sugar - 5-6 tsp
  5. Cardamom Powder - 1 tsp
  6. Raisins - 1/2 small cup
  7. Almonds- 1/2small cup (chopped)
  8. Ghee - 2 tbsp

Directions -
Grated Carrot
  • Heat the pan and add grated carrot, in 2-3 minutes you will notice that it has started leaving water. Reduce the flame to medium and add milk and stir thoroughly.
  • Cover and cook for 15-20 minutes.
  • Add Khowa and keep on stirring for some time.
  • When all the liquid content of Halwa gets dried up, add ghee and stir on high flame for 5-7 minutes.
  • Now, add sugar, cardamom powder, raisins and almonds. Keep on stirring for another 10 minutes on high flame.
  • Serve it hot.

Rassewala Aalu ( Potato curry)

  1. Boiled Potatoes - 4 medium (1/2 inch pieces)
  2. Yogurt - 1 cup
  3. Gram flour (besan)- 1tbsp
  4. Salt to taste
  5. Turmeric Powder - 1/4 tsp
  6. Pure Ghee - 2 tbsp
  7. Cumin seeds - 1/2 tsp
  8. Asafoetida - 1 pinch
  9. Curry leaves - 7-8
  10. Ginger - 1/2 inch pieces (chopped)
  11. Green Chillies - 2 (chopped)
  12. Red Chilli Powder - 1/4 tsp
  13. Garam Masala powder - 1/2 tsp
Directions -
  • Whisk yogurt with gram flour, salt and turmeric powder.
  • Add 3/4th cup of water and mix well.
  • Heat ghee in a pan. Add cumin seeds and when they begin to change colour add asafoetida, curry leaves, ginger and green chillies. Sauté for a minute.
  • Add red chilli powder and the yogurt mixture and mix well. Add potatoes and cook, stirring continuously. 
  • Once the mixture comes to a boil, reduce the heat and simmer for another five to six minutes till potatoes are soft.
  • Garnish with garam masala powder and serve hot with Roti or Parantha.

Fried Tortilla for Chat

Ingredients - 

  1. All Purpose flour - 2 big cup
  2. Oil - 1 bowl + 1/2 bowl
  3. Semolina ( suzi)- 1/2 bowl
  4. Salt to taste
  5. Mangrela- Ajwain - 1tsp

Directions - 
  • In a bowl, mix all purpose flour with salt, semolina and mangrela-ajwain and mix it thoroughly.
  • Add 1/2 bowl of oil and mix it properly.
  • Now, add water as required and make a tight dough.
  • Divide the whole dough in 10 equal parts.
  • Make balls out of every part.
  • Roll it on cooking floor by a rolling pin.
  • Take a smallest steel bowl and make the impression of circles by pressing bowl hard enough.
  • Separate these circles from the left over parts.
  • Add oil in a heated pan and fry these circles.
  • Add these fried tortilla in any Chat or you can also eat it plain.

Samosa Chat

Ingredients for 2 people-

  1. Samosa- 2
  2. Hara Mutter ke choley- 2 bowl
  3. Salt to taste
  4. Black Pepper Powder - to sprinkle
  5. Yogurt - 2 tsp
  6. Tamarind Chutney - 2 tsp
  7. Chat Powder- 1 tsp
  8. Fried tortilla - 1 Bowl
Directions - 
  • In a bowl, beat yogurt and add Salt and black pepper powder.
  • Now, Break Samosa in 2 parts and keep it in a serving dish.
  • Add hot Hara Mutter ke choley on top of it.
  • Add 2tbsp of beated Yogurt.
  • Add 1 tsp of Tamarind Chutney all over the plate.
  • Sprinkle some salt and Black pepper powder and chat powder as desired according to taste.
  • Crush Fried tortilla from hand and spread all over the chat.
  • Enjoy it hot with a cup of Tea/ Coffee.

Samosa Chutney


Samosa with chutney
  1. All Purpose flour - 2 big cups
  2. Salt to taste
  3. Red Chilli Powder - 1tsp
  4. Potato- 2 (big)
  5. Garlic- 2 cloves (minced)
  6. Onion - 1/2 (big-chopped)
  7. Cilantro - 1 cup (chopped)
  8. Peas - 1 small cup
  9. Peanuts- 1 handful
  10. Paneer - 1 small cup (diced)
  11. Oil - 1 bowl + 2 tbsp+ 1/2 small cup
  12. Mangrela- ajwain- 1 tsp
  13. Semolina (Suzi)- 1/4 big cup
Directions - 

  • Divide the potato in 4 equal parts. Wash it and put it at high temperature in microwave for 12 minutes.
  • At the same time, mix All Purpose flour with salt, Mangrela- Ajwain and 1/2 small cup of oil. Mix it thoroughly.
  • Add semolina and mix it. Add water as required and make a tight dough.
  • Cover it with a cloth wet (with a hot water) and leave it aside for 30 minutes.

  • By this time the Potato is done. Drain the water and let it cool down for 5 minutes.
  • Peel the skin of Potato and mash it with a big spoon.
  • Meanwhile, heat a pan and add 2 tbsp of Oil in it.
  • When heated, add minced garlic, with chopped cilantro, after cilantro turns dark in color, add chopped onion and fry it on high flame for 5 minutes. Now, add peas with peanuts and mix it on high flame for 30 seconds. 
  • Add salt and Red Chilli Powder. Now, add mashed Potato in the mix and stir continuously for 5 minutes on high flame. In the End, add diced Paneer and mix by very light hand, as Panner are delicate and might can break.
  • Now, take a small amount of dough, make a small ball out of it and roll it by a rolling pin and make it a size of chapati and very thin in thickness. 
  • Divide it in 2 equal parts by cutting it in 2 halves.
  • Take 1 half and turn it to make a cone, press the edges so it sticks, fill in the mixture and press the both sides of opening together to make them stick.
  • Heat 1 bowl of oil in another big pan for frying these samosa.
  • Fry on each side by turning over, till samosa turn light brown in color.
  • Fried Samosa
  • Enjoy it hot with a Tamarind chutney.

French Fries/Potato Fries


  1. Potato - 1
  2. Oil- 1 bowl ( to fry)
  3. Salt as required
  4. Black Pepper Powder to sprinkle

Directions - 
Soaked Potato in cold water
  • Peel the Potato.
  • Cut it in string form.
  • Soak it in cold water with salt for 30 minutes, if possible add few cubes of ice in the bowl.
  • Now in a heated pan, add oil and let it get heated.
  • Drain the water and keep it on paper towel for 5 minutes to drain the excess .

Fried once
  • Now, fry the potato in an oil till it turns light brown in color.
  • Take it out and let it cool down for 5 minutes.
  • Again, fry the fried potato and fry till it color changes slightly dark than before.
  • Serve it hot with burger and tomato sauce.

Vegetable Cheese Pizza

Ingredients for 1 large pizza-
  1. All Purpose flour - 3 cups
  2. Active dry yeast - 2 tsp ( 1 Packet)
  3. Sugar - 1 tbsp
  4. Paste Sauce - 4 tbsp
  5. Oil (to spray)
  6. Cheese - 1 handful (grated)
  7. Onion - 1/2 small cup (sliced)
  8. Bell Pepper - 1/2 small cup (cut in small pieces)
  9. Mushroom - 1/2 small cup (cut in small pieces)
  10. Salt- 1tsp
Directions - 
  • In a 1 cup of warm water, add Yeast and mix it and let it get set for 5 minutes. You will get to know the yeast is ready, as bubble formation will start on the top surface of liquid.
  • In an another bowl, mix All Purpose flour with Sugar, salt and yeast liquid. Make a dough out of it and add water as required. You want your dough to be soft and sticky, so add water in a little amount as required.

  • Now, Knead the dough by stretching the dough and not letting it break and then again mixing it back to the dough. Knead it for 10 minutes. The color of dough will change and will become lighter.

  • You will get to know your dough is ready, when you will press 2 fingers in the dough, it will push the hole back up.
  • Transfer the dough in a bowl and cover it with a wet warm cloth or paper towel. Keep the bowl in a warm place for 1-2 hour as required, till the dough doubles in quantity.

  • After 2 hrs, remove the cloth and knead the dough for 30 seconds.
  • Make a ball of the whole dough, and on cooking flour, roll the dough by a rolling pin (you can make the shape and thickness of base as you desire).
  • Make sure the dough is quite thin in the center.

  • Place the dough base on a baking sheet, add a pasta sauce and spread it all over the base.
  • Spray Oil all over the base.
  • Spread cheese from the top.
  • Keep all vegetables where ever you desire on the pizza. 
  • Keep the baking sheet inside the preheated Oven for 18-20 minutes at 400 degrees.
  • Take out the Pizza and keep it on the cooling stand for 5 minutes.
  • Divide the pizza in equal 8 parts by Pizza cutter.
  • Enjoy it with tomato sauce and red chilli flakes.

Raw Banana-Potato Stew


  1. Raw Banana- 1 (peeled)
  2. Potato - 1 (Medium size)
  3. Garlic cloves- 2
  4. Onion- 1/2 (sliced)
  5. Salt to taste
  6. Tomato - 1 (chopped)
  7. Turmeric Powder - 1/2 tsp
  8. Coriander Powder - 1tsp
  9. Red Chilli Powder - 1 tsp
  10. Cumin Powder - 1tsp
  11. Olive Oil - 1tsp
  • In a pan, add Olive oil and before heating add chopped garlic and sliced onion.
  • Turn on the cooking stove and add diced potato, and fry on high flame for 2-3 minutes.
  • Add diced raw banana and chopped tomato and mix it for 30 seconds.
  • Add salt according to taste, with all spices.
  • Add 1/2 glass of water.
  • Cook it covered for 10 minutes.
  • Garnish it with chopped Cilantro.
  • Enjoy iy hot with Roti/ Tortilla or Parantha.

Badam Ka Halwa (Almond Confectionary)

  1. Almonds- 12-15 Pieces(raw)
  2. Sugar- 2 tsp
  3. Gram Flour (besan)- 1 tbsp
  4. Ghee/Unsalted Butter - 2 tbsp
  5. Milk- 1/2 cup 

  • Grind dry almonds in a mixer jar.
  • In a dry pan, heat ghee. When heated, add crushed Almonds and fry for 5 minutes, to make it crunchy.
  • Now, add Gram flour and mix it thoroughly.

  • Keep frying, till Gram flour turns golden brown in color.
  • Add Sugar, mix and then add 1/2 glass of water and 1/2 glass of milk.
  • Boil and keep stirring.
  • In sometime, after about 5-7 minutes, water liquid will evaporate and the content will start sticking in the base of pan.
  • Keep stirring, till all the water is evaporated.
  • Your Halwa is ready.
  • Serve it hot.
Ready Halwa
Note- Very good medicine for cough and cold, can be easily used for babies and kids. For Babies, do not use more than 4-5 tsp in 1 time, twice a day and for Toddlers, 10-12 tsp, twice a day, Adults can have 1 bowl in 1 time, twice a day.

Cilantro-Cumin flavored Rice

Ingredients for 4 people-
  1. Rice - 2 cup
  2. Salt to taste
  3. Black Pepper Powder- 1/2 tsp
  4. Cumin seeds- 1 tsp
  5. Cumin powder - 1tsp
  6. Cilantro- 1 cup (chopped)
  7. Corn - 1 cup
  8. Peas- 1cup (to garnish)
  9. Butter/ Ghee- 1tsp

Directions - 
  • Wash Rice and soak it in water for 10 minutes.
  • Boil Rice in a bowl, with double amount of water in a microwave for 20 minutes.
  • In a Pan, add butter/ghee, let it heat up. Add Peas and salt and fry it for 5 minutes.Take it out.
  • Now, Add cumin seeds to the ghee, and when it turnd dark grey in color, add chopped cilantro and fry it for 2-3 minutes.
  • Add Corn, Salt, cumin powder and black pepper powder, stir it.
  • Add Rice and mix thoroughly for 5 minutes.
  • Transfer the Rice to the serving bowl.
  • Garnish the rice by adding fried Peas on the top in center.
  • Frying Cilantro and Corn seeds
  • Enjoy it with any curry.

French Egg Omelette

French Egg Omelette-  As I mentioned in my earlier posts, I have a special love for eggs. I love eggs in any form, and love to make different versions of it. And yes, I will say, every spice and condiment changes the flavor of eggs. Then, again I really love few versions of eggs, and can eat every other day. One of them is French Egg Omelette. I find it so delicious, with the right amount of protein, and right intake of veggies in 1 meal. And yes, it is loved by kids as well. Well, my observation about this meal is, it is high in protein, nutritious, less fat, filling and so delicious that you want to make it every other day. This dish is a complete meal. But, you can also enjoy it with a slice of bread, or tortilla. 

Some benefits of Vegetables used in this dish are- 
  1. Cabbage - muscle builder, rich in iron, lowers cholesterol, 
  2. Carrot - improves appearance of skin, hair and nails, lower cholesterol, high in fiber, improves eyesight, 
  3. Onion - lowers blood lipids and blood pressure, protects from cardiovascular disease, 
  4. Bell Pepper - protective against cataracts, good source of Vitamin-C, helps to protect from cancer and heart disease.
  5. Green Beans - Good in antioxidant, Have cardiovascular benefits.
  6. Corn-  Good source of mineral manganese, rich in antioxidant and helps in digestion.

Ingredients for 2 French Egg Omlet-
  1. Eggs - 4
  2. Oil- 1+1 tsp
  3. Salt to taste
  4. Black Pepper Powder - 1/2 tsp
  5. Mixed veggies - 2 cups
  6. Onions - 1/4 cup (finely chopped)
  • In a pan, add 1tsp of oil and add all sliced vegetables, and on medium flame let it get cooked for 15 minutes or till the vegetables turn soft.
  • Add salt and stir.

  • In another Bowl, beat 2 eggs, add salt and black pepper powder to the beated eggs.
  • In an Open Pan, add 1tsp of oil and tilt the pan, so that oil is spread all over the pan.
  • Pour the Egg  mixture to the pan.
  • The edges of the egg mixture, will start become firm, gently push it towards the center, again the egg liquid will spread and starts becoming firm, again push it towards center, repeat the process until the whole egg mixture is cooked.
  • Do not turn over and cook on other side.
  • Fill in the mixture of vegetables in the center of the Omelette.
  • Flip the half of Omelette, so that vegetables get covered.
  • Serve it hot with Tomato sauce.

Dahi Aloo Curry(Yogurt-Potato Stew)

Ingredients for 2 people-
  1. Yogurt - 1 cup (beated)
  2. Potato (aloo)- 1 ( big, boiled and diced)
  3. Garlic - 2-3 cloves (minced)
  4. Onion-  1/2 (chopped)
  5. Salt to taste
  6. Turmeric Powder - 1/2 tsp
  7. Red Chilli Powder - 1/2 tsp
  8. Cumin Powder-  1/2 tsp
  9. Cooking Oil - 1tsp
Directions -
  • In a heated Pan, add oil, heat it and add minced garlic, fry it for 30 seconds and add chopped onion and fry it, till it turns light brown in color.
  • Add boiled Potato, on high flame, keep frying for 2-3 minutes.
  • Add salt, turmeric powder, red chilli powder and cumin powder, and on medium flame, stir the whole mixture and cover the lid.
  • Let it get cooked for another 10 minutes, on medium flame.
  • Increase the flame and add yogurt/Dahi to the stew.
  • Mix it on high flame, with in 5 minutes, all the liquid of Yogurt will evaporate and only solids are left over.
  • Close the flame and let the stew settle down for 5 minutes.
  • Transfer the stew in a serving bowl.
  • Garnish it with finely chopped Cilantro.

Bread- Poha

Ingredients for 2 people-
  1. Bread - 8 pieces (Edges removed)
  2. Salt to taste
  3. Black Pepper Powder - 1tsp
  4. Oil - 2 tsp

Fried Bread Pieces
Directions - 
Bread pieces
  • Cut the bread pieces in 9 equal parts.
  • In a heated Pan, add oil and then bread pieces.
  • Stir so that every piece of bread is touched by oil.
  • Let it get fried on high flame for 10 minutes. Keep stirring continuously, so it doesn't get burned.
  • Sprinkle salt and Black pepper powder.

Bread Pizza

Ingredients -
  1. Bread Slice - 2 Slice
  2. Onion- 1/8 (Sliced)
  3. Bell Pepper - 1/4 (sliced)
  4. Carrot-  1/4 (sliced)
  5. Roasted Semolina (Suzi) - 1/2 cup
  6. Whole Milk - 1 cup
  7. Salt to taste
  8. Black Pepper Powder - 1/2 tsp
  9. Oil- 2tsp

Directions -
  • In a bowl, add semolina with salt, black pepper powder and whole milk. Leave it aside for 10 minutes.
  • Toast Bread in a toaster.
  • On one side of bread, add a layer of semolina mixture.
  • Above that, add a slice of carrot, 2 slice of onion and 1slice of bell pepper, randomly.
  • On an heated pan, add 1tsp of oil and on medium flame, let this side of mixture get  cooked for another 5-7 minutes.
  • Serve it hot with tomato sauce.

Besan ki Gatte Wali Sabzi (Gram flour Curry)

  1. Gram Flour- 3 tbsp
  2. Onion Paste- 3 tbsp
  3. Garlic - 2-3cloves
  4. Onion - 1/2 (chopped)
  5. Green chilli- 2 (chopped)
  6. Tomato - 1(chopped)
  7. Cumin seeds - 1 tsp
  8. Salt to taste
  9. Turmeric Powder- 1/2 +1/2 tsp
  10. Red Chilli Powder - 1+1 tsp
  11. Coriander Powder - 1tsp
  12. Cumin Powder - 1tsp
  13. Cooking Oil - 2 tsp + 1/2cup
  14. Water as Reqd.
Directions - 
Gram Flour Dough

  • In a bowl, mix Gram Flour with salt, 1/2 tsp of turmeric Powder and Cumin Powder.
  • Mix it with 2tbsp of Onion Paste with 2 tsp of mustard oil, add onion paste slowly as required and make a hard dough.

Boiling Dough

  • Divide the dough in two equal parts. Form a cylindrical shape of two doughs.
  • In an Open pan, boil the cylindrical doughs for 15 minutes. 

Boiled Dough

  • Cut the dough in equal rounds. 
  • In an open heated pan, add 1/2 cup of oil and heat it.

Dough cut in circles

  • Fry the dough circles. 
  • Fried Circles
  • Grind garlic, chopped onion, green chilli and tomato together.

  • In a heated Pan, add 1 tsp of cooking oil. add cumin seeds, when it crackles, add onion- garlic paste to the Oil.
  • Add salt, turmeric powder, coriander powder, red chilli powder and stir it thoroughly.
  • When paste is fried, add a glass of water and let it boil.
  • Add fried dough circles to the curry, on medium flame, let it get cooked for another 15 minutes, covered.
  • When u will press the fried circles, it should be soft, then your curry is ready.
  • Enjoy it with Roti/ Tortilla or Rice.

Egg Omlet

  1. Egg-2
  2. Onion- 1/4 (chopped)
  3. Green Chilli - 1 (chopped)
  4. Oil - 1 tsp
  5. Salt to taste

Directions - 

  • Beat Egg in a bowl for 2minutes, add salt and again beat for a minute.
  • Add chopped onion and green chilli and again beat for 1 minute.
  • In a heated Pan, add a spoon of oil, spread it on all over the pan and add beated egg to the pan.
  • Once cooked, turn it around and again cook it on another side.
  • Serve it hot with roti/ tortilla or Bread.
