Well, few of those things are cooking special things. When, I started my life as a mother, I met a lady in Gym. She was a mother of two, her hubby was a chef in a renowned Hotel in Delhi. Everyday, when I am working out we use to talk, and every time she will give me some useful tips, about managing Kitchen, some great tips for cooking, and some ultimate tips for baking. But, then I was not equipped with great utensils and I definitely wasn't having perfect equipments to bake, and it never occurred to me how to use existing equipments.

My life as a home maker and a baker started few years back. Slowly, baking became my passion. I started experimenting new things. Copying and following the recipe, anyone can do. The thing is there when you actually wants to experiment things on your own, and see what is the outcome.

Here is my story of this cake. We were in Walmart, and you know how beautifully they keep things in their aisle. I got this Orange as my little one was screaming in the market , that she wanted one. I knew she is not going to eat this orange, as it will taste bitter. So, I said no to her. But, she was adamant that she wanted that particular big orange. After coming home, she do not want even to look at it. Hmmmm, I knew it, so thought a bit and came up with the idea of making Orange Cake.
While I was mixing ingredients, I heard a big knock at my door. It was so hard, I actually dropped the open bottle of honey in the batter. It was a UPS guy, came to deliver stuffs which I got online. Cursing him, I started my work again, but it seems very difficult to remove extra honey from the batter. So, planned to go ahead and see the outcomes. The out come was really delicious. And, I remembered, the Brittania Fruit Cake, which as a kid we always use to ask mom to buy it for us, when ever we are in grocery store.

Soya Twist

Some people says Facebook is just wastage of time, but I say it is a wastage of time only if you are not utilizing the information in a correct way. So I learnt a recipe from a facebook friend or I should lots of recipes, but other recipes will come eventually by time. But today I am going to share one of the easiest recipe which you are gonna love it.
When I fist ate it I went crazy for it and the recipe is just so easy and cooking time is only maximum 10 minutes. What say???? Lets give it a try.
The recipe includes Soyabean/Nutrella. Many of you must be knowing it is a good source of protein and we should definitely include it in our meals. Now, I want to share some more good points of Soyabean/ Nutrella-

Complete Protein

Meat alternatives that come from soy beans are complete proteins. This means they have all the essential amino acids present. Amino acids are the building blocks that create protein. Protein is a macronutrient that the body needs in large amounts for cell repair, immune function and muscle growth. A 3.5-ounce serving of soya chunks contains over 54 grams of protein. This is more than the same serving size of meat and eggs. The recommended daily intake of protein is 56 grams for men and 46 grams for women.

What separates meat alternatives from actual meats is their carb contents. Regular meat is carb-free, but soya chunks contain a high amount. This is because they derive from beans, which are carb-containing foods. A 3.5-ounce serving of soya chunks contains just under 30 grams of carbs. The recommended intake of carbs for the average adult is 130 grams. Carbs are a primary source of fuel for the body. Athletes who train rigorously for an extended period of time need a higher amount to meet these demands. A daily intake of 250 grams is more optimal.

The calories in a food derive from protein, carbs and fat. Because soya chunks have only a negligible amount of fat, the calories come from the carbs and protein. A 3.5-ounce serving has about 336 calories. Based on a 2,000-calorie diet, this comprises about 18 percent of your total intake.

Iron is an electrolyte mineral needed for oxygen transport in the body. Being deficient in iron can lead to physical weakness, fatigue and a compromised immune system. Soya chunks have a very high concentration of iron. A 3.5-ounce serving contains just over 21 milligrams. Males aged 19 and older and females 51 and older need 8 milligrams a day. Women from 19 to 50 however, need 18 milligrams a day. One serving of the chunks provides more than 100 percent of the recommended daily intake for both genders.

Calcium is another electrolyte that helps strengthen bones and teeth and also aids in muscle contractions. Soya chunks contain over 530 milligrams of calcium per 3.5-ounce serving. The daily recommendation for this mineral is 1,000 milligrams for men 19 to 70 and women 19 to 50. Women aged 51 and older, and men aged 71 and older should get 1,200 milligrams a day.
Ingredients for 3 people:
  1. Soya Chunks - 2 cups
  2. Capsicum - 3-4
  3. Onion - 2
  4. Soya Sauce - 2 tsp
  5. Vinegar - 2 tsp
  6. Tomato Ketchup - 2 tsp
  7. Sesame Seeds - 1/2 tsp
  8. Salt to taste
  9. Red Chilli - 1/4 tsp
  10. Oregano - 1/2 tsp
  11. Oil - 2 tsp

Directions to prepare -

  • After 2-3 whistles drain out extra water. Squeeze the chunks.
  • Put oil in a pan saute onions and capsicum, after 5-6 minutes add soya chunks, red chilli, tomato sauce, soya sauce, vinegar, sesame, oregano, salt and mix it well.
  • Keep it on high flame for 2 mins. Enjoy it with garlic bread of fried rice. Simple and healthy.

Stuffed Rice flour balls with lentils ( Dal-pitha)

Dal pitha is a traditionally food of Bihar, India. This is something which we are eating from our childhood. There are always few memories which you never forget from your childhood. It's from
one of these wonderful memories.

I remember, my mom working in morning 3-4 hours continuously, to make this dish for afternoon. And then, she is tired, and will sleep after lunch for a hour. When she goes off to sleep, we siblings, act as a bunch of chicken, who are tied in a cage, and they are set free suddenly. We do all mischievous works in this 1 hour. And, when our mom is awake, we act as if we did nothing, except study.

So, one day, I was all set to go in the store, and was waiting for mom to sleep. After she went to her room, I tiptoed to the Kitchen, and straight went where the sugar containers are stored. I use to love eating sugar. Oh, I can never forget that moment, when I was looking at the open full container of sugar, and the door behind me got closed. Initially, I thought it is because of the wind, but then I realized," NO, all the outside doors are closed, so there is no wind inside the house". I tried opening the door, but couldn't. Imagine a situation, of a small 10 year old girl, whose mother has told her not to eat sugar, and she is locked inside a Kitchen, with the open container of sugar, which she even didn't know how to close. So, after few minutes, my mom opened the door. My mother didn't say a word to me that day, but I stopped eating only sugar from that day.

I never gave it a thought of how it is made, until I got married. Few things, which I got to know about Dal-Pitha is it is made in the peak winter season. In our household, 2 or 3 types of pithas are made at the same time. It takes about 2-3 hours to make. And when you make this Pitha, with more helping hands, the process of making Pitha becomes a fun.

Here, is the recipe of making the Pitha.

Ingredients -
  1. Chana Dal (soaked for 30 minutes) - 2 handful
  2. Cumin Seeds - 1tsp
  3. Hing - 1pinch
  4. Salt to taste
  5. Ghee - 1 tbsp
  6. Turmeric Powder  - 1tsp
  7. Red Chilli Powder - 1/2 tsp
  8. Garam Masala- 1tsp
  9. Rice Flour - 3 cups
  10. Water as required
Directions -
  • Boil Chana Dal as usual, with salt, turmeric powder, red chilli powder and garam masala.
  • In a pan, add ghee, when heated add cumin seeds, hing and then boiled dal. Stir continuously, so that all water of Dal is dried up, leaving behind dry Dal powder.
  • Now, in another Pan, fill 2 glasses of water.
  • Boil the water, close the flame, and slowly add rice flour in the water, continously stirring.
  • Transfer the flour in another bowl, and let it cool a bit for 5-7 minutes.
  • Now, by adding little amount of cold water, make a dough not to tight nor to soft.
  • Knead the dough for minimum 5 minutes, to get a right texture. (More you knead, more soft Pitha will be).
  • Take dough equal to the size of peach, make an impression in center and convert it in a shape of small bowl. Fill the Dal Mixture, and close the mouth of dough, by pressing it with both hands.
  • Apply 2 drops of Oil in both the palms, and press the dough ball from both sides, and give it a shape, you want for your Pitha. I like Oval Shape, so i made it in this form.
  • Now, in another pan, fill enough water, so that all pithas can get dipped in it.
  • Boil the water, add pithas in it, and let it get cooked for a while.
  • When the Pithas, will be done, it will start floating on the top of the pan.
  • Enjoy it hot with Alu-Dum.

This fruit seems to be favorite fruit for most of the family members. Lots of people think banana can only provide us fat. Well, I will say there are more other benefits of banana which should be considered first. Some of them are listed below-

  1. Reduces depression.
  2. Regulate the Bowel system.
  3. Reduce blood pressure and heart of disease.
  4. Help our bones grow stronger.

  10. Help prevent ulcers.
There are many varieties of ways in which we can include banana to our diet everyday. Fruit Custard, Banana Smoothie, Malpua, Banana Bread, etc. Banana bread tempt me most, and I love it most. Last time I made it, it didn't came out well. It tasted too good, but it was very dense. I have a problem, if food doesn't look good, I cannot eat it. So, it was very difficult for me to consume it. So, this time I was much careful while making this bread. And I am real happy, when it came out so good. And believe me, it tastes as wonderful as it looks.

Krishna Janmashtami or Janamashtami, is also known as Krishnashtami. It is celebrated in different regions of India by differnet names like Saatam Aatham, Gokulashtami, Ashtami Rohini, Srikrishna Jayanti, etc. It is an annual commemoration of the birth of the Hindu deity Krishna.

This festival is celebrated on the eighth day (Ashtami) of the Krishna Paksha (dark fortnight) of the month of Bhadrapada which every year falls in the month of August or September. God krishna was famous for his Ras Lilas. The term Ras means Aesthetic and Lila means play or dance, which roughly translates the meaning of Ras-Lila as " Dance of Divine Love". While the Rasa lila re-creates the flirtatious aspects of Krishna's youthful days, the Dahi Handi celebrate God's playful and mischievous side, where teams of young men form human towers to reach a high-hanging pot of butter and break it. This tradition, also known as uriadi, is a major event in Tamil Nadu on Gokulashtami.

Krishna was the 8th son of Devaki and Vasudeva. And was born to kill Mama Kans.
Mathura (in present day Mathura district, Uttar Pradesh) was the capital of the Yadavas, to which Krishna's parents Vasudeva and Devaki belonged. King Kansa, Devaki's brother, had ascended the throne by imprisoning his father, King Ugrasena. Afraid of a prophecy that predicted his death at the hands of Devaki's eighth son, Kansa had the couple locked into a prison cell. After Kansa killed the first six children, and Devaki's apparent miscarriage of the seventh (which was actually a secret transfer of the infant to Rohini as Balarama), Krishna was born.

After his birth Vishnu ordered Vasudeva to take Krishna to Gokul to Nanda and Yashoda where he can live safely, away from his evil Uncle Kansa. So Vasudeva took Krishna with him and crossed Yamuna to reach Gokul .There everyone was asleep,so he quietly kept him there and returned with Yashoda's daughter.Kansa, thinking her to be Devki's eight child, threw her on a stone. But she rose in air and transformed into Yogmaya(who is Vishnu's helper)and warned Kansa about his death. Then she disappeared.Krishna grew up in Gokul with his brother Balram. Then he returned to Mathura and killed Kansa with the help of his brother,Balram.

In many regions of India, Janamashtami is celebrated by fasting and staying up until midnight, the time when Krishna is believed to have been born. In some parts of India, it is celebrated as Dahi-Handi. The handi is a clay pot filled with buttermilk that is positioned at a convenient height prior to the event. The topmost person on the human pyramid tries to break the handi by hitting it with a blunt object. When the handi breaks, the buttermilk is spilled over the entire group, symbolizing their achievement through unity.

There are few foods made especially for this vrat -

Happy Janamasthami to all

Paneer Tikka

Paneer Tikka- One of my favorite dishes. In my college days, whenever we are eating out, it's one of the dishes we like to order in starters. Never given a thought about how it is made.

4 years back, my husband got relocated and we came to a new place. Everything was new. New place, new house, new friends, I was liking it there, but I was missing my lovely family back at home. Days passed, and one day during an evening walk, I met a girl (later she became 1 of my good friend). We always use to go for a long walk, long girl friend chats. I read some where few days back, "Eating Healthy helps keep our body healthy, but Woman brains stay Healthy, when they meet their  Girlfriends. "

Ingredients for 4 people-
  1. Paneer cubes - 1/2 kg
  2. Garlic Paste - 2tsp
  3. Ginger paste - 2tsp
  4. Chaat Masala - 1tsp
  5. Chilli Powder - 1 tsp
  6. Tandoori Masala - 1 tsp
  7. Black Pepper powder - 1tsp
  8. Salt - 1tbsp
  9. Yogurt - 3 tbsp
  10. Oil for brushing
  11. Lemon - 1 (quartered)
  12. Onion Sliced into rings - 7-8
  13. Green Bell Pepper - 7-8 ( cut in squares)
Directions -
  • Mix all ingredients except lemon and oil and leave it aside for 2 hours, and keep it inside the refrigerator for 8-10  hours.
  • 20 minutes before serving, place the paneer, onions and Green bell peppers on a baking pan, brush it with oil and bake it in a preheated oven for about 10 minutes.
  • Turn it over, again brush it with oil and cook on another side for another 5 minutes.
  • Serve the Tikkas hot, garnished with lemon, onion rings and green bell peppers.
