Chinese Fried Rice

There are days, when you feel very low. Lot of things, happen around you, which you do not approve but sometimes you do not have options. And have to go through the flow of life... Well, it was a real bad day for me. And I didn't feel like cooking.. So, thought of making something real quick. It itself is a complete meal. And goes perfectly in Lunch Box. So, here presenting you Chinese Fried Rice.. When I was in Anaheim, we went for our daughter's Belle Dance Class. While coming back, it got late, and we decided to go to the nearest restaurant. And we landed, to this Chinese restaurant. It was very clean, and decor was very beautiful. Ordered Fried Rice, as it was my Kiddo's Choice... But, I am glad I did. It was too yummy. I tried recreating same fried rice. It took me about 4 attempts, to get to the same taste... Here, presenting you the same fried rice, which you can make ready in 10-15 minutes. Los Angeles- A big city. Lots of place to be seen. If a person goes every weekend to roam, then also it will take him/her about half of an year to see every place in L.A. and in it's neighboring counties. Lemon Egg Rice

Was not feeling well, but wanted to eat something different and delicious from our regular meal.... Asked hubby, what he wants to eat, he wanted to eat something from rice preparation....So, thought of making Lemon Rice, but thought of giving it a twist.... So, presenting you a delicious sour preparation of Rice with eggs. Can be enjoyed alone or with Raita .  Ingredients for 2 people- Preparation time- 5 minutes Cooking time- 20 minutes Egg - 4 (Raw) Rice- 6 handful (washed and soaked for 5 minutes) Salt to taste Oil- 2 tbsp Turmeric (Haldi) powder- 1tsp Red Chilli powder- 1/2 tsp Mustard (sarson) seeds- 1/2 tsp Curry leaves- 8-10 leaves Urad dal- 2 tbsp ( washed and water drained) Lemon juice of 2 complete Lemons   Directions- In an open pan, boil eggs for 10 minutes. Choley-Bhaturey

Ingredients for 2 people -   All Purpose Flour- 2 Big cups Cooking Oil- 1/2 cup ( to add in dough) + 1 Cup (for frying) Salt to taste Mangrela- Ajwain- 1 tsp Yogurt-  1 cup Water as required Directions -  In a Bowl, add All purpose Flour with salt, ajwain- mangrela and yogurt with 1/2 cup of oil. Mix it properly and  then add water little by little to make a tight dough. Keep it aside in a warm temperature, for 12 hours. Now, add 2 tsp of flour and again knead the dough properly for 2-3 minutes. Divide the dough in equal 12 parts. Make each part of dough in small balls. Roll each ball by a rolling pin. Heat rest of the Oil in a deep pan. Fry the rolled tortilla on both sides, till it turns golden brown in color. Enjoy it hot with Chloey , Yogurt, some chopped Onions and Green Chilli.

Mutter-Mushroom Pulao (Rice cooked w/ Peas and Mushroom)

Ingredients for 2 people- Rice - 4 handful Onion - 1/2 big Onion (sliced) Peas - 1 small cup Mushroom  - 5 mushroom (sliced) salt to taste Safflower - 1 pinch Cloves - 2-3 Almonds - 1/2 small cup  Directions -  Wash rice, drain out the water and keep it aside for 10 minutes. In an empty heated pan, fry washed sliced mushroom. It will start leaving water, fry till all the water is evaporated. Take the mushrooms out of oan, and add 1 tbsp of oil in the same pan. Add Onions and saute till it turns light brown in color. Add Peas and Mushroom, slat and fry them for another 2-3 minutes. Add salt, washed rice, cloves and Safflower, and fry them for another minute or 2. Add double amount of water, compared to rice. Let it get cooked open in a pan at high flame for another 10 minutes. By the time water gets evaporated, rice will be cooked. Enjoy it hot with Yogurt/ Stew. Garnish it with small pieces of Almonds.

Vegetable Pulao

Vegetable Pulao Ingredients- Basmati Rice - 1cup Green Peas (Frozen/ fresh) - 1 cup Carrot- 1 big (chopped) Potato - 1 medium size (chopped) Cauliflower - 2-3 flowers (chopped) Onion - 1/2 big (chopped) Cumin seeds (jeera)- 1tsp Cinnamon sticks (Dal Chini) - 2 Cloves(laung) - 2 Black Cardamoms (badi elaichi) - 2 Bay leaves (Tej Patta)- 2 Ghee/ Olive Oil - 1tsp Water - 2cups Salt to taste Black Pepper Powder - 1/4 tsp Raisins - 1/2 small cup Almonds - 12-15 (cut in small pieces) Directions-  Wash and soak rice for 20 minutes. After 20 minutes, drain excess water and keep aside. In a Pan, add 2 tbsp of ghee or Olive Oil. Add Cumin seeds, Cinnamon, Cloves, Black Cardamoms, Bay leaves, Salt and chopped onion and stir it for 2 minutes on high flame. Add all other vegetables with soaked rice and 2 cups of water, cover it and on medium floame let it get cooked for another 9-10 minutes. Add raisins and almonds and stir the pulao. Cilantro-Cumin flavored Rice

Ingredients for 4 people- Rice - 2 cup Salt to taste Black Pepper Powder- 1/2 tsp Cumin seeds- 1 tsp Cumin powder - 1tsp Cilantro- 1 cup (chopped) Corn - 1 cup Peas- 1cup (to garnish) Butter/ Ghee- 1tsp Directions -  Wash Rice and soak it in water for 10 minutes. Boil Rice in a bowl, with double amount of water in a microwave for 20 minutes. In a Pan, add butter/ghee, let it heat up. Add Peas and salt and fry it for 5 minutes.Take it out. Now, Add cumin seeds to the ghee, and when it turnd dark grey in color, add chopped cilantro and fry it for 2-3 minutes. Add Corn, Salt, cumin powder and black pepper powder, stir it. Add Rice and mix thoroughly for 5 minutes. Transfer the Rice to the serving bowl. Garnish the rice by adding fried Peas on the top in center. Frying Cilantro and Corn seeds Enjoy it with any curry. Vegetable Fried Rice

Ingredients- Rice - 4 handful Onion - 1 cup ( sliced) Cabbage - 1/2 cup (chopped) Carrot- 1 (Grated) Bell Pepper - 1/2 cup ( cut in small pieces) Peas - 1 Handful Mushroom - 1/2 Cup Almonds- 10-12 (crushed-to garnish) Pistachios - 10-12 (to garnish) Salt to taste Oil - 1tsp White Vinegar - 2tbsp Directions -  Wash rice and cook it in an open pan, till the rice is tender. Drain the water, add cold water and drain the water. In a big pan, add oil and let it get heated. add onions and fry it till it turns brown. Now, add all vegetables with salt and white vinegar, cook it for 15 minutes, covered. When the vegetables are cooked, add cooked white rice in pan. Mix it properly. Garnish it with crushed almonds and pistachios . Serve it hot with vegetable manchurian.

Peas Pulao

Ingredients -  Peas (mutter) - 1 Handful Cumin seeds - 1 tsp Rice - 4 handful Unsalted butter - 1 tsp(melted) Salt to taste Directions -  Cook white rice and drain out the water. Take unsalted butter in a pan, add cumin seeds, let it crackle, add peas with salt to the pan and mix it properly, cover it and let it get cooked for 5 minutes on medium flame. After 5 minutes, switch off the pan, add cooked white rice to the pan, and stir it properly, so that all the mixture of peas is spread all over the white rice. Enjoy it with any curry.

Cumin Seeds Rice (Jeera Rice)

Ingredients -  Basmati Rice - 2 tea cups Cumin Seeds (Jeera) - 1 tsp Salt to taste Water - 4 tea cups Olive Oil - 1 tbp Directions -  Wash the rice and soak it for 15 minutes. Drain the water and take the rice in a microwaveable cooking bowl. Add water, double the quantity of rice. Put it in microwave for 5 minutes on high temperature. Now, take it out, add olive oil, salt and cumin seeds in the bowl. Again cook it on high temperature for 10 minutes. Now, stir the rice in a bowl. If there are some traces of water in the rice, cook it again for 2-3 minutes. Your rice is ready, Enjoy it with curry.

Ingredients for 4 people- Rice- 2 Handful + 4 Handful ( washed and drained) Salt to taste Cumin seeds - 1 tsp Turmeric - 1 tsp Cumin Powder - 1 tsp Red Chilli Powder - 1/2 tsp Black Pepper Powder - 1/2 tsp Biryani Masala- 1 tbsp Onions - 1/2 Chopped + 1/2 finely Sliced Potato - 1 Chopped Carrot - 1 Chopped Peas - 1 Handul Green Bell Pepper - 1/2 Chopped Cauliflower - 4-6 small flowers Mushroom - 1/2 cup Raisins - 1/2 cup Cashews - 4-6 pieces ( cut in small pieces) Almonds - 4-6 pieces ( sliced in small pieces) Olive Oil - 2 Spoons Salted Butter- 1/4 tsp Directions- Directions for white rice- Put Cumin seeds in a dry pan. Put the pan on a flame. Kepp on stirring occasionally. Let the cumin seeds turn grey but let iut burn. Now add the rice from bowl, with 4 handful. Add salt and mix it properly. After mixing, add water, double in quantity of rice. Take same bowl for the measurement. Stir it and add just 1 spoon of Olive oil in the Pan from above. C...
