Slow Cooker Yellow Lentil Soup

 

Ingredients for 4 people:

Preparation Time - 15 minutes

Cooking time - 8-9 hrs.


  1. Dried Yellow Lentils - 1 1/2 cup
  2. Water - 4 cups
  3. Carrots- 1/2 cup (sliced)
  4. Onion - 1/2 (chopped)
  5. Garlic - 2 cloves (minced)
  6. Curry Powder - 2 tsp
  7. Salt to taste
  8. Bay Leaves - 2
  9. Tomatoes - 1 (chopped)
  10. Spinach fresh - 1 cup
  11. Yogurt Plain - 3-4 tsp

 

Directions - 






  • In 3 1/2 to 4-quart slow cooker, combine all ingredients except tomatoes, spinach and yogurt, mix well.
  • Cover and cook on Low setting for 8 to 9 hours.
  • 5 minutes before serving, stir tomatoes into soup. Cover and cook an additional 5 minutes or until thoroughly heated. 
  • Remove and discard bay leaves, before serving. Top individual servings with 1/4 cup spinach and 1 tablespoon yogurt.
