Mixed Vegetable Parantha/Tortilla

  1. All purpose flour- 2 cups
  2. Cabbage - 1 cup (chopped)
  3. Potao - 1 (diced)
  4. Carrot - 1 (chopped)
  5. Peas - 1/2 cup
  6. Salt to taste
  7. Black Pepper Powder - 1 tsp
  8. Olive Oil as needed
  9.  Water as required
  10. Gram flour- 2tsp (if needed)
Directions -
  • In a big bowl, add All Purpose flour with 1/2 cup of water, mix it with spatula, add water as needed and make a tight dough.
  • Sprinkle 4-5 drops of oil on the dough and kneed it for 2-3 minutes.
  • In a microwave safe bowl, add cabbage, carrot, peas and potato, and keep it in microwave for 10 minutes on high power.
  • After 10 minutes, take it out, drain the water and let the vegetables cool down for 15 minutes.
  • Add salt and black pepper powder, mix and mash the vegetables together.
  • If the vegetables are watery add 2 tsp of Gram flour in the mixture.
  • Now, take 2 small portion of dough and convert them in small balls, roll it separately.
  • In the center of dough add the vegetable mixture, apply a touch of oil all over the sides of tortilla.
  • Cover it with the other tortilla.
  • Heat the open pan, keep this tortilla on pan and cook it on medium flame for 2-3 minutes.
  • When cooked, turn it over and cook on the other side.
  • Apply few drops of oil on the tortilla and cook it on both sides separately.
  • Have it hot with any stew or you can also enjoy it with peas stew.
