Mango Cake Cookie Bowl #CreativeCookieExchange
Every year in summer, Mango becomes part of our daily meal... We prepare lots of dessert from Mango like Mango custard, mango cake, Mango mousse.... These 3 things are absolutely adored by my kiddo... it's always my first preference to make...
So, while, I was deciding what to make for Cookies and Icecream event, I made Mango cake for the dessert.. The moment it came out, this idea stricked me of making cookie out of it... I always love to do experiment with my cooking, and when I succeed,it gives me immense happiness.
My oven, was already hot that time, so mashed 2 slices of cake, and baked at high temperature, to make it hard...And it worked out just fine... The crunchiness and butter goodness, mixed with the flavor of ice- cream, took my heart away.. While I am writing this, I have again started craving for this delicious dessert... Meanwhile, I will go and have 1 more cookie bowl filled with Mango

The theme this month is Ice Cream Cookies--any kind of cookie that works well with ice cream in any form--could be an ice cream sandwich, could be the perfect cookie garnish! Ingredients you need to follow to make 6 Cookie Bowls-
- Mango Cake or Any cake - 2 big slices
- Unsalted Butter - 2 tbsp
Directions to follow -
- Mash the cake, mix butter, and let it cool down a bit.. (If your cake is cold, heat it in a microwave safe bowl for 2 minutes, then proceed as written)
- Line the cupcake liner in a cupcake pan, grease it..
- Take a cake of size equal to walnut, and press it in the cupcake liner, and make a thin layer of it around the liner...
- Now, bake at 520 degrees for 5-7 minutes, at lower rack, till the edges starts turning light brown..
- Take out of pan, and let it rest...
- Remove the liner from the cookie bowl, when it is still little warm...
- Now, serve it with 2 scoops of icecream, topped with sliced Mangoes on top.
