Triple Chocolate Rocky Road Bundt Cake #BundtBakers
I have been wanting to bake chocolate cake from a long time.... Somehow, the other cake flavors were getting baked and chocolate was not getting it's turn...
The other day, I was googling for the variety of cakes, I can make, which also goes with this month's theme. I didn't found any cake, in which I can put everything in the batter, and it comes out perfectly as I want... Well, this time I wanted to experiment with, what my heart wanted me to bake... I have been picturing the Chocolate Bars inside the cake from a week.. I knew, Chocolate is going to melt inside the cake.. But, I wanted to see how different Chocolates, together is going to affect the flavors..
I am very happy to inform you,it was one of the most yummy, melt in mouth cake ever... I am so happy, that I did what really I wanted to do.. And it turned out so awesome... Lately, I have been working only with egg-less cakes... Different flavors... And what little tricks, make them moist, yummy and flavorful... Most of them turned out good... But this one was overpowering all of them, in flavor, moistness, sponginess, everything....

- Triple Chocolate Rocky Road Bundt Cake by Simply Veggies
- All Purpose flour (Maida) - 1 1/2 cup
- Chocolate Powder - 1/4 cup
- Baking Soda - 1 tsp
- Baking Powder - 1 tbsp
- Brown Sugar - 1 cup
- White Sugar - 1/4 cup
- Butter - 1/3 cup
- Olive Oil - 1/2 cup
- Yogurt (Curd)- 1 cup or as needed
- White Chocolate Bar - 1
- Brown Chocolate Bar - 1
- Chocolate Chips (mini) - 1 cup
- Desiccated Coconut - 1 cup
- Almonds (whole) - 8-10
- Mix All Purpose flour, with Chocolate powder, Baking Soda and Baking powder.
- In another bowl, in a medium speed mix together, melted butter, olive oil, brown sugar and White sugar for a couple of minutes.
- Mix Wet Ingredients in a dry Ingredients, and fold in together.
- Now, add Yogurt, 1/2 cup at a time, and fold in.
- In the end, fold Chocolate Chips in the batter.
- Now, trick is in laying the batter in the Bundt Pan.
- Preheat the oven at 350 degrees.
- Spray the pan, and sprinkle all desiccated coconut in the pan, laying most of them in the center.
- Spoon the batter in a pan, and make a layer.
- Break the White Chocolate in a big chunks, and lay them on this layer.
- Again, spoon the batter in the pan covering all White Chocolate.
- Now, make another layer of broken chunks of Brown Chocolate.
- Spoon the batter and cover all the Brown Chocolate.
- Insert Almonds here and there, and let it rest for 5 minutes.
- Now, bake for 40 minutes, or till the toothpick comes out clean.
- Let the cake cool for 15 minutes.
- Turn it upside down, and pat it lightly for the cake to come out.
- Let it cool for another 30 minutes...
- And enjoy...
