Mixed Vegetable Burger

Ingredients- Cauliflower - 1 cup Cabbage - 1 cup (chopped) Onions - 1 cup (chopped) Carrots - 1 cup (chopped) Bell Peppers - 1 cup (chopped) Green Peas - 1 cup Tomato - 1 small whole (2-2/5" dia) Salt to taste Black Pepper Powder - 1 tsp Red Chilli Pepper - 1 Tsp. Lemon Juice - 1 fl. oz. Tomato Sauce - 1 oz. All Purpse Wheat Flour - 4 tbsp Whole Milk - 2 cups Burger Buns - 1 serving Canola/Vegetable Oil- 1 oz. Garlic - 1 Tsp. (minced ) Potatoes (Peeled and diced) - 1 large Yellow Sweet Corn - 1 cup Beets - 1 cup Sliced Mushrooms - 1 cup Royal Red Kidney Beans - 1 cup (Soaked and Boiled) Directions – In a kettle, boil milk. When boiled add lemon juice into the milk which will separate the whey and fat in the pan. Pour through cotton cloth to remove all the whey from the fat. Wash the vegetables, put in a microwavable bowl with water and microwave for 12 minutes on high temperature. Drain the water and let the vegetables cool down for 10 minutes. Mas

Gajar ka Halwa (Carrot Fudge)

 Gajar ka Halwa Ingredients for serving 10 people- Carrot - 5-6 (grated) Milk - 2 Big cups Khowa - 1 Small cup Sugar - 5-6 tsp Cardamom Powder - 1 tsp Raisins - 1/2 small cup Almonds- 1/2small cup (chopped) Ghee - 2 tbsp Directions - Grated Carrot Heat the pan and add grated carrot, in 2-3 minutes you will notice that it has started leaving water. Reduce the flame to medium and add milk and stir thoroughly. Cover and cook for 15-20 minutes. Add Khowa and keep on stirring for some time. When all the liquid content of Halwa gets dried up, add ghee and stir on high flame for 5-7 minutes. Now, add sugar, cardamom powder, raisins and almonds. Keep on stirring for another 10 minutes on high flame. Serve it hot. Halwa cooking

Rassewala Aalu ( Potato curry)

Ingredients- Boiled Potatoes - 4 medium (1/2 inch pieces) Yogurt - 1 cup Gram flour (besan)- 1tbsp Salt to taste Turmeric Powder - 1/4 tsp Pure Ghee - 2 tbsp Cumin seeds - 1/2 tsp Asafoetida - 1 pinch Curry leaves - 7-8 Ginger - 1/2 inch pieces (chopped) Green Chillies - 2 (chopped) Red Chilli Powder - 1/4 tsp Garam Masala powder - 1/2 tsp Directions - Whisk yogurt with gram flour, salt and turmeric powder. Add 3/4th cup of water and mix well. Heat ghee in a pan. Add cumin seeds and when they begin to change colour add asafoetida, curry leaves, ginger and green chillies. Sauté for a minute. Add red chilli powder and the yogurt mixture and mix well. Add potatoes and cook, stirring continuously.  Once the mixture comes to a boil, reduce the heat and simmer for another five to six minutes till potatoes are soft. Garnish with garam masala powder and serve hot with Roti or Parantha.

Fried Tortilla for Chat

Ingredients -  All Purpose flour - 2 big cup Oil - 1 bowl + 1/2 bowl Semolina ( suzi)- 1/2 bowl Salt to taste Mangrela- Ajwain - 1tsp Directions -  In a bowl, mix all purpose flour with salt, semolina and mangrela-ajwain and mix it thoroughly. Add 1/2 bowl of oil and mix it properly. Now, add water as required and make a tight dough. Divide the whole dough in 10 equal parts. Make balls out of every part. Roll it on cooking floor by a rolling pin. Take a smallest steel bowl and make the impression of circles by pressing bowl hard enough. Separate these circles from the left over parts. Add oil in a heated pan and fry these circles. Add these fried tortilla in any Chat or you can also eat it plain.

Samosa Chat

Ingredients for 2 people- Samosa - 2 Hara Mutter ke choley - 2 bowl Salt to taste Black Pepper Powder - to sprinkle Yogurt - 2 tsp Tamarind Chutney - 2 tsp Chat Powder- 1 tsp Fried tortilla - 1 Bowl Directions -  In a bowl, beat yogurt and add Salt and black pepper powder. Now, Break  Samosa  in 2 parts and keep it in a serving dish. Add hot  Hara Mutter ke choley  on top of it. Add 2tbsp of beated Yogurt. Add 1 tsp of  Tamarind Chutney  all over the plate. Sprinkle some salt and Black pepper powder and chat powder as desired according to taste. Crush Fried tortilla from hand and spread all over the chat. Enjoy it hot with a cup of Tea/ Coffee.

Samosa Chutney

Ingredients- Samosa with chutney All Purpose flour - 2 big cups Salt to taste Red Chilli Powder - 1tsp Potato- 2 (big) Garlic- 2 cloves (minced) Onion - 1/2 (big-chopped) Cilantro - 1 cup (chopped) Peas - 1 small cup Peanuts- 1 handful Paneer - 1 small cup (diced) Oil - 1 bowl + 2 tbsp+ 1/2 small cup Mangrela- ajwain- 1 tsp Semolina (Suzi)- 1/4 big cup Directions -  Divide the potato in 4 equal parts. Wash it and put it at high temperature in microwave for 12 minutes. At the same time, mix All Purpose flour with salt, Mangrela- Ajwain and 1/2 small cup of oil. Mix it thoroughly. Add semolina and mix it. Add water as required and make a tight dough. Cover it with a cloth wet (with a hot water) and leave it aside for 30 minutes. By this time the Potato is done. Drain the water and let it cool down for 5 minutes. Peel the skin of Potato and mash it with a big spoon. Meanwhile, heat a pan and add 2 tbsp of Oil in it. French Fries/Potato Fries

Ingredients- Potato - 1 Oil- 1 bowl ( to fry) Salt as required Black Pepper Powder to sprinkle Directions -  Soaked Potato in cold water Peel the Potato. Cut it in string form. Soak it in cold water with salt for 30 minutes, if possible add few cubes of ice in the bowl. Now in a heated pan, add oil and let it get heated. Drain the water and keep it on paper towel for 5 minutes to drain the excess . Fried once Now, fry the potato in an oil till it turns light brown in color. Take it out and let it cool down for 5 minutes. Again, fry the fried potato and fry till it color changes slightly dark than before. Serve it hot with burger and tomato sauce.

Vegetable Cheese Pizza

Ingredients for 1 large pizza- All Purpose flour - 3 cups Active dry yeast - 2 tsp ( 1 Packet) Sugar - 1 tbsp Paste Sauce - 4 tbsp Oil (to spray) Cheese - 1 handful (grated) Onion - 1/2 small cup (sliced) Bell Pepper - 1/2 small cup (cut in small pieces) Mushroom - 1/2 small cup (cut in small pieces) Salt- 1tsp Directions -  In a 1 cup of warm water, add Yeast and mix it and let it get set for 5 minutes. You will get to know the yeast is ready, as bubble formation will start on the top surface of liquid. In an another bowl, mix All Purpose flour with Sugar, salt and yeast liquid. Make a dough out of it and add water as required. You want your dough to be soft and sticky, so add water in a little amount as required. Now, Knead the dough by stretching the dough and not letting it break and then again mixing it back to the dough. Knead it for 10 minutes. The color of dough will change and will become lighter. Raw Banana-Potato Stew

Ingredients- Raw Banana- 1 (peeled) Potato - 1 (Medium size) Garlic cloves- 2 Onion- 1/2 (sliced) Salt to taste Tomato - 1 (chopped) Turmeric Powder - 1/2 tsp Coriander Powder - 1tsp Red Chilli Powder - 1 tsp Cumin Powder - 1tsp Olive Oil - 1tsp Directions-  In a pan, add Olive oil and before heating add chopped garlic and sliced onion. Turn on the cooking stove and add diced potato, and fry on high flame for 2-3 minutes. Add diced raw banana and chopped tomato and mix it for 30 seconds. Add salt according to taste, with all spices. Add 1/2 glass of water. Cook it covered for 10 minutes. Garnish it with chopped Cilantro. Enjoy iy hot with Roti/ Tortilla or Parantha.

Badam Ka Halwa (Almond Confectionary)

Ingredients- Almonds- 12-15 Pieces(raw) Sugar- 2 tsp Gram Flour (besan)- 1 tbsp Ghee/Unsalted Butter - 2 tbsp Milk- 1/2 cup  Directions-  Grind dry almonds in a mixer jar. In a dry pan, heat ghee. When heated, add crushed Almonds and fry for 5 minutes, to make it crunchy. Now, add Gram flour and mix it thoroughly. Keep frying, till Gram flour turns golden brown in color. Add Sugar, mix and then add 1/2 glass of water and 1/2 glass of milk. Boil and keep stirring. In sometime, after about 5-7 minutes, water liquid will evaporate and the content will start sticking in the base of pan. Keep stirring, till all the water is evaporated. Your Halwa is ready. Serve it hot. Ready Halwa Note- Very good medicine for cough and cold, can be easily used for babies and kids. For Babies, do not use more than 4-5 tsp in 1 time, twice a day and for Toddlers, 10-12 tsp, twice a day, Adults can have 1 bowl in 1 time, twice a day.

Cilantro-Cumin flavored Rice

Ingredients for 4 people- Rice - 2 cup Salt to taste Black Pepper Powder- 1/2 tsp Cumin seeds- 1 tsp Cumin powder - 1tsp Cilantro- 1 cup (chopped) Corn - 1 cup Peas- 1cup (to garnish) Butter/ Ghee- 1tsp Directions -  Wash Rice and soak it in water for 10 minutes. Boil Rice in a bowl, with double amount of water in a microwave for 20 minutes. In a Pan, add butter/ghee, let it heat up. Add Peas and salt and fry it for 5 minutes.Take it out. Now, Add cumin seeds to the ghee, and when it turnd dark grey in color, add chopped cilantro and fry it for 2-3 minutes. Add Corn, Salt, cumin powder and black pepper powder, stir it. Add Rice and mix thoroughly for 5 minutes. Transfer the Rice to the serving bowl. Garnish the rice by adding fried Peas on the top in center. Frying Cilantro and Corn seeds Enjoy it with any curry. French Egg Omelette

French Egg Omelette -  As I mentioned in my earlier posts, I have a special love for eggs. I love eggs in any form, and love to make different versions of it. And yes, I will say, every spice and condiment changes the flavor of eggs. Then, again I really love few versions of eggs, and can eat every other day. One of them is French Egg Omelette. I find it so delicious, with the right amount of protein, and right intake of veggies in 1 meal. And yes, it is loved by kids as well. Well, my observation about this meal is, it is high in protein, nutritious, less fat, filling and so delicious that you want to make it every other day. This dish is a complete meal. But, you can also enjoy it with a slice of bread, or tortilla.  Some benefits of Vegetables used in this dish are-  Cabbage - muscle builder, rich in iron, lowers cholesterol,  Carrot - improves appearance of skin, hair and nails, lower cholesterol, high in fiber, improves eyesight,  Onion - lowers blood lipids and blood

Dahi Aloo Curry(Yogurt-Potato Stew)

Ingredients for 2 people- Yogurt - 1 cup (beated) Potato (aloo)- 1 ( big, boiled and diced) Garlic - 2-3 cloves (minced) Onion-  1/2 (chopped) Salt to taste Turmeric Powder - 1/2 tsp Red Chilli Powder - 1/2 tsp Cumin Powder-  1/2 tsp Cooking Oil - 1tsp Directions - In a heated Pan, add oil, heat it and add minced garlic, fry it for 30 seconds and add chopped onion and fry it, till it turns light brown in color. Add boiled Potato, on high flame, keep frying for 2-3 minutes. Add salt, turmeric powder, red chilli powder and cumin powder, and on medium flame, stir the whole mixture and cover the lid. Let it get cooked for another 10 minutes, on medium flame. Increase the flame and add yogurt/Dahi to the stew. Mix it on high flame, with in 5 minutes, all the liquid of Yogurt will evaporate and only solids are left over. Close the flame and let the stew settle down for 5 minutes. Transfer the stew in a serving bowl. Garnish it with finely chopped Cilantro.

Bread- Poha

Ingredients for 2 people- Bread - 8 pieces (Edges removed) Salt to taste Black Pepper Powder - 1tsp Oil - 2 tsp Fried Bread Pieces Directions -  Bread pieces Cut the bread pieces in 9 equal parts. In a heated Pan, add oil and then bread pieces. Stir so that every piece of bread is touched by oil. Let it get fried on high flame for 10 minutes. Keep stirring continuously, so it doesn't get burned. Sprinkle salt and Black pepper powder.

Bread Pizza

Ingredients - Bread Slice - 2 Slice Onion- 1/8 (Sliced) Bell Pepper - 1/4 (sliced) Carrot-  1/4 (sliced) Roasted Semolina (Suzi) - 1/2 cup Whole Milk - 1 cup Salt to taste Black Pepper Powder - 1/2 tsp Oil- 2tsp Directions - In a bowl, add semolina with salt, black pepper powder and whole milk. Leave it aside for 10 minutes. Toast Bread in a toaster. On one side of bread, add a layer of semolina mixture. Above that, add a slice of carrot, 2 slice of onion and 1slice of bell pepper, randomly. On an heated pan, add 1tsp of oil and on medium flame, let this side of mixture get  cooked for another 5-7 minutes. Serve it hot with tomato sauce.

Besan ki Gatte Wali Sabzi (Gram flour Curry)

Ingredients- Gram Flour- 3 tbsp Onion Paste- 3 tbsp Garlic - 2-3cloves Onion - 1/2 (chopped) Green chilli- 2 (chopped) Tomato - 1(chopped) Cumin seeds - 1 tsp Salt to taste Turmeric Powder- 1/2 +1/2 tsp Red Chilli Powder - 1+1 tsp Coriander Powder - 1tsp Cumin Powder - 1tsp Cooking Oil - 2 tsp + 1/2cup Water as Reqd. Directions -  Gram Flour Dough In a bowl, mix Gram Flour with salt, 1/2 tsp of turmeric Powder and Cumin Powder. Mix it with 2tbsp of Onion Paste with 2 tsp of mustard oil, add onion paste slowly as required and make a hard dough. Boiling Dough Divide the dough in two equal parts. Form a cylindrical shape of two doughs. In an Open pan, boil the cylindrical doughs for 15 minutes.  Boiled Dough Cut the dough in equal rounds.  In an open heated pan, add 1/2 cup of oil and heat it. Dough cut in circles Fry the dough circles.  Fried Circles Grind garlic, chopped onion, green chilli and tomato together.

Egg Omlet

Ingredients- Egg-2 Onion- 1/4 (chopped) Green Chilli - 1 (chopped) Oil - 1 tsp Salt to taste Directions -  Beat Egg in a bowl for 2minutes, add salt and again beat for a minute. Add chopped onion and green chilli and again beat for 1 minute. In a heated Pan, add a spoon of oil, spread it on all over the pan and add beated egg to the pan. Once cooked, turn it around and again cook it on another side. Serve it hot with roti/ tortilla or Bread.
