Nimki

Everybody's childhood memories are the special ones. My mom is a great cook, and she has a perfect hand in traditional foods..... Few of these Snacks, are following from generations.... My grandmother's mother use to cook for her child, then my grandmother use to cook for my mother, and then my mother use to cook for we siblings..... I am continuing the tradition, and making these snacks for my kiddo. Nimki was use to be one of the important snacks in the festivals.... Well, I am trying to continue this tradition and making traditional sweets in festivals....
Now, I know how my mother use to feels and the amount of satisfaction she gets when she see her kiddo's face beaming with happiness, after eating these Snacks. My mom has some specialty foods and Nimki is one of them..... I do not know, whether I will ever be able to reach that amount of perfection...... But, yes my Kiddo was happy to eat this Snack....
When we were growing up, my mom use to make Nimki as our evening snacks.... And we had a very typical taste of eating these Nimki's, with tomato Ketchup... It was meant to be our snack, but we always use to take 2-3 servings, and then we had to miss our Dinner, as we were so full.....




Ingredients-
  1. All Purpose Flour (Maida)- 2 cup
  2. Whole Wheat Flour (Atta) - 1cup
  3. Semolina (Suzi) - 1cup
  4. Oil - 2 cups (for frying) +1/4 cup
  5. Mangrela- Ajwain- 1 tsp
  6. Asafoetida (Hing)-  1/2 tsp
  7. Salt to taste
  8. Water as required


Directions -
  • Heat 1/4 cup of oil and let it cool down for another half an hour.
  • Mix All Purpose flour, Whole Wheat flour with Semolina, 1/4 cup of oil, Mangrela- Ajwain, salt and Asafetida.
  • By adding, little amount of water make a tight dough out of this flour mixture.

  • Cover the dough with a warm wet cloth for half an hour.
  • Again, knead the dough for couple of minutes.
  • Now, take a dough of double size of Walnut.
  • Roll it of 1/4 inch of thickness, and cut it in your desired shape...
  • By the other end of Knife, take these cut pieces out.
  • In a big pan, add 1 cup of oil and heat it.
  • Add these cut pieces, in the heated oil and fry till it turns golden brown in color.
  • Can be enjoyed hot as well as cold.
  • Can be stored in a tight container for 15 days.

Green Chick Peas Stew ( Hara chana ke choley)

Ingredients for 2 people- 
Green Chick Peas Stew
  1. Green Chick Peas ( Hara Chana ke choley)- 2 handful
  2. Onion - 1/4 (diced)
  3. Garlic -3 cloves
  4. Ginger paste - 1tsp
  5. Tomato Paste - 1 tsp
  6. Salt to taste
  7. Tumeric Powder - 1tsp
  8. Red Chill Powder - 1tsp
  9. Coriander Powder - 1tsp
  10. Cumin Powder - 1tsp
  11. Cilantro - 1/2 small  cup (chopped)
  12. Oil - 1tsp
Directions - 
Green Chana
Soaked Green Chana
Boiled Green Chana



  • Soak Green Chick Peas overnight.
  • Boil it for 10 minutes in a pressure cooker.






Boiling curry
  • In a pan, heat Oil with a paste of garlic and onion, fry it.
  • Add ginger paste and tomato paste to the pan, fry it for 5 minutes.
  • Add salt, turmeric powder, cumin powder, coriander powder and red chilli powder in a pan, fry it till it turns brown in color and starts leaving oil in a pan.
  • Add a glass of water in a pan, let it boil.
  • Add boiled green chick peas in the pan.

  •  Reduce the flame to medium and let it get cooked for 15-20 minutes, covered.
  • Garnish it with chopped cilantro
  • Serve it hot with Roti/tortilla.

Tomato Egg Curry

Ingredients  for 2 people- 
  1. Egg - 4 (No.)
  2. Tomato - 2 (medium- grinded)
  3. Garlic - 4-5 cloves
  4. Ginger Paste - 1tsp
  5. Salt to taste
  6. Turmeric Powder - 1tsp
  7. Cumin Powder - 1tsp
  8. Green Chilli - 2 (chopped)
  9. Coriander Powder - 1tsp
  10. Oil - 1tsp
  11. Cilantro - 1/2 Cup (chopped)
Directions - 
  • In an empty broad pan, add Oil and heat it.
  • Add chopped garlic and fry it till it turns brown in color.
  • Add grinded tomato in a pan.
  • Add salt, turmeric powder, red chilli powder, cumin powder and coriander powder with a cup of water, mix it and stir it.
  • On a medium flame, break egg in a pan. Let it cook and don't touch for 10 minutes.
  • After 10 minutes, turn the egg and cook on other side.
  • Transfer curry in a serving bowl, carefully, as the egg might can break. Garnish curry with chopped cilantro.

Malpua

Ingredients-
  1. All Purpose flour (Maida) - 2 small cups
  2. Milk - 2 big cups
  3. Sugar - 4-5 tbsp
  4. Banana - 1 (mashed)
  5. Cardamom Powder - 1/2 tsp
  6. Coconut powder - 2 tsp
  7. Cashews - 1/2 cup(chopped)
  8. Raisins - 1/2 cup
  9. Almonds - 1/2 cup ( chopped)
  10. Cooking Oil/ Ghee - 1-2 bowl (for frying)
Directions - 
  • In a bowl, mix 1 cup of milk with mashed banana.
  • Add Sugar, cardamom powder and mix it.
  • Now, slowly add all purpose flour, stirring at the same time.
  • Now, add milk as required to make it a smooth batter ( same as batter of cake). Mix so that no lumps are left.
  • Add coconut powder, cashews, almonds and raisins simultaneously in a batter.
  • With a big serving spoon, add a spoon of better in a heated oil. Reduce the flame and on medium flame cook it for 5-7 minutes.
  • Turn it over and cook it on another side.
  • Enjoy your Malpua hot.

Thekua (Sweet All Purpose flour pressed balls)

Ingredients -
  1. Wheat flour - 2 Big cups
  2. Sugar - 1 small cup
  3. Oil - 1 + 1 bowl
  4. Baking Soda - 1tsp
Directions - 
  • Take Wheat flour in a bowl. Add Baking soda and 1 bowl of Oil and mix it. Make it a point the oil is equally spread all over the flour.
  • Add Sugar and again mix it, spreading all over the flour.
  • Now, slowly add hot water to mix the flour, make a little hard dough.
  • Divide the dough in equal parts.
  • Take 1 part, by both palms make small balls and press it.
  • Heat Oil in a pan, on medium flame, one by one add pressed balls to the pan and deep fry it, till it turns light brown in color.
  • Enjoy your dessert hot or cold.
  • These Thekua's can stay for 15-20 days in a room temperature.

Rice flakes fried

Rice Flakes fried
Ingredients -
  1. Rice flakes - 3 handful
  2. Salt to taste
  3. Haldiram bhujia - 4 tbsp
  4. Onions - 1/2 cup ( chopped)
  5. Tomato - 1/2 cup (chopped)
  6. Green chilli - 1 (chopped)
  7. Olive Oil - 1tsp
Directions - 
Raw Rice Flakes
  • Take rice flakes in a heated empty pan.
  • Fry it for 10 minutes, by continuosly stirring it.
  • Now, add Olive Oil in the pan above the rice flakes.
  • Keep on frying it for another 10 minutes, till the rice flakes turn brown in color.
  • Add salt according to the taste.
  • Transfer the fried rice flakes to the serving dish.
  • Add bhujia, in the centre on the rice flakes.
  • Now, sprinkle chopped onions, tomato and green chilli.

  • Serve it hot.
